Chinese Doughnut with Glutinous Rice aka Kap Chung aka 夹粽
Chewy and sweet with a ring of brown dough enclosing a center of chewy glutinous rice, this traditional snack originally comes with white pulut in the middle but because I have too banyak BUNGA TELANG, I made some blue ones which received mixed response
This Kap Chung, Ham Chim Peng and Ma Kiok uses the same dough recipe (different filling) hence if you can make one, you can make them all
Ingredients:
Dough Starter
100g plain flour
1 teaspoon sugar
1 teaspoon yeast
150ml water
Dough
300g plain flour
100g sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon alkaline water / lye water
140ml water
Filling
300g glutinous rice (washed and soaked for 4 hours)
1 teaspoon salt
1 teaspoon sugar
125ml water
1/2 teaspoon five spice powder

    为什么夹粽中间糯米的部分会炸到膨胀爆裂甚至严重糯米会脱落?
