Chinese Beef Meat Pie

Chinese style crispy beef meat pie with tips of juicy and tender beef filling.
Ingredients
300g beef
2 large scallion , finely chopped
1/2 tsp. Sichuan peppercorn powder
1/2 tsp. salt
2 green onions
1 thumb ginger , sliced
1 tbsp. light soy sauce
Pinch of fresh ground pepper
1 egg
1 tbsp. oyster sauce
1 tbsp. sesame oil
1/2 tsp. sugar
1 tbsp. Shaoxing cooking wine
1/2 middle size white onion
For the dough
2 cups all-purpose flour
1/2 cup hot water over 90℃
60 ml room temperature water , plus 10ml more for adjusting
1 tbsp. vegetable cooking oil
pinch of salt
This filling is for two batches.

I made these yesterday but didn't have spring onions so I had to substitute that with chives. I also used half pork/beef. They turned out to be very very tasty!!

was beef tender without making it tender?
This looks so good! Can I use cornflour instead of egg? I am guessing that it is to bind the ingredients together?

what is the purpose of placing pie in cold oil? Is it because the raw meat needs the additional cooking time until temperature of oil reaches 375 degrees?

Yes totally...the outer crust will be more of like bread..with all purpose floor it'll be a bit chewy

Jerron Yee because she used a hot water dough. (Same thing used for profiteroles) it makes the dough puffy whereas cold water keeps it from rising)

I made these with beef ( IT was very very large not small)
Nice recipe but should make 13 to 15 pcs instead of 20 …
So when I order this at a restaurant , my local restaurant it says meat pie half for like 6$ and full for 8$ or something like that then there’s the meat pie with simmered pork and green onion it’s called Kant Kant Food court The lolder lady only speaks Chinese and her daughter usually takes my order . Anyways Ima order it hopefully it’s the same one
On typograph paint is not good to put, it is poisonous. Need to use towel paper or a clean cloth if stingy to purchase paper.
