Nice video; I've trie many recipes off the web and the meat always ends up too dry and crispy, even after boiling the cubes before stir-frying. I like the instructions in your post. What you show most of the other recipes do not tell us: You have put a lot of time and effort into it-Thank you for posting this, I hope to try your method.

Can it be any type of white fish? I did frozen pollack last week and it came out grainy and a total failure. It didn't even hold up its shape. No water added at that moment when mixing. I was only able to succeed one time(my first time ever but i forgot the recipe). Looking back i didn't even think about saving it. I need to know 🙏 i want to get aome fish from the store now.

Maybe you can try it. The key to success is to grasp the ratio of water to starch and adjust it while stirring. Don't put it all in at once because this ratio is related to the fish you use and the ambient temperature at that time.
