This delicious chicken saltimbocca with garlic spinach is the perfect weeknight meal! I'm always cooking for my family so most of these recipes are geared towards prepping multiple pounds of chicken breasts and making that job streamlined and more efficient. Setting up all the prosciutto, sage, and flour-coated chicken on parchment paper is the easiest method I know of for preparing chicken saltimbocca! I hope you enjoy this classic Italian recipe!

One of the best parts about this channel is that it’s so well balanced between professional and…. I don’t know what to call it… “homeliness”? The production value is top notch.. you see everything you need to see and nothing you don’t… with all of the requisite detail for someone like myself, who is actually trying to learn something. However, the host is personable, relatable, and approachable. Unlike TV chefs, he comes off like someone I would actually know! Lol So, the end result is a cooking video that demonstrates food I would actually attempt to make and demonstrated in a fashion that actually teaches something and appears… within reach.

Great tutorials! Brava!! A 40 inch counter would work wonders for the video camera angle. Or, a makeshift work surface on top of island counter that would lift your work surface 4 “. Just a thought as I had a raised island in a past abode! Love the video’s.🥳

Oh! I agree , Jim's food presentation has "home comfort-immersing" added to it . Jim puts in much more time writing the recipes, formatting camera work . These are really good recipes with Italian panache put into each recipe.

That looks like the most delicious thing I've ever seen. I think I'm going to make an attempt to do it myself. Finishing up the chicken at the end seems like the trickiest part; I'll probably overcook everything, lol. Luckily, the ingredients are super common - I may actually get it right at some point!

Try using marsala instead of the white wine... goes really well with the sage and prosciutto. Another great recipe!
I appreciate it when you do some low/er carb recipes.
Much easier for me to put sage directly on the chicken, the prosciutto over, always liked it that way

Nice! I never thought of pinning the sage right onto the chicken, I've always just tossed the leaves in the sauce. Your vids are definitely inspiring me to cook some things I love, but haven't made in years. I'm curious what you might do with some veal chops.

Okay, I made this dish a few days ago! It was delicious! My only alternations was I left out the sage and I added sliced mushrooms.

The one I’m finishing up now is February, 2017. I bought another one last month because I knew I was running low. Love the stuff. Sticks better than the other crud you buy in grocery stores in the small boxes.

Thanks! About 2 weeks on the pasta fagioli. I am going to publish pasta e ceci first I think. That whole aisle in Costco with the plastic wrap, foil, etc... is one of the best kept secrets!

Use "Better than Bouillon" product to mix up a quick stock.

Can you find mature spinach in your area? I lived in France and could buy spinach leaves that were the size of small rhubarb leaves. They had a much deeper flavor and were absolutely lovely! Then I came back home and could only find the baby leaves, which I eat twice a week - but miss the taste of the mature spinach.

I have no video for it yet. It will be up in a couple weeks. For now though this pasta e ceci is very similar: kzread.info/dash/bejne/e3d_rdixc5uThag.html. You could sub out cannellini or borlotti beans for the chickpeas and have pasta fagioli "fazool".
That kid isn't complaining.
Does the butter need to be cold for the sauce?

No but it's easier to add it in at the end when cold.
At 4:48 in you might want to tell viewers to get rid of the stems on the sage.

My wife doesn't eat pork. Can I substitute the prosciutto with bresaola?
i think your son, changed his mind about dinner, it looked like the chicken was really enjoyable to him
After you pound just chicken then season and it your sage leaves then put the prosciutto and present into the chicken it will stick no toothpicks needed

I don’t watch the whole video as i ran out of time, so my apologies if you mention this later on in the video. But Chicken “Saltimboccha “ literally translates as: Chicken that “jumps into the mouth” - and it has that name for a super good reason…. Just try making it, if you don’t believe me, and try to resist just rolling up the thin slices, once cooled, and popping them into your mouth one after another…. I defy you to resist!!!!

They are sage leaves not bay leaves and you should leave them on
I can't understand why so many people in these cooking podcasts chop the garlic instead of using a garlic press. The press is easier, quicker and gives much smaller pieces.
