Chef John's Rocky Road - Food Wishes

I always thought Rocky Road candy was named after the ice cream, but that’s not the case. Apparently, it appeared in Australia back in the late 1850’s, and that’s what inspired the ice cream. There’s a lot of controversy as to who was responsible for this candy-to-frozen-dessert conversion, but there’s no debating the fact that chocolate, marshmallow, and nuts are a fantastic combination, no mater the delivery system. We use bits of short bread / biscuits (UK) instead of nuts and they taste just as delicious with a nice little texture variance.

I tried this but used cayenne instead of cocoa, pork tenderloin instead of salted almonds, and onions instead of chocolate chips. But I kept the marshmallows. As a tribute to Chef John.

Great recipe and so simple! In Australia the Rocky Road also has desiccated coconut in it
my great grandmother used to make these, she called them chocolate squares, She added butterscotch chips and peanut butter to the chocolate mixture and always used multi-colored marshmallows and cocktail peanuts! I have so many memories of sitting at her kitchen table and she would bring out a tin of these from the freezer :)

That's not these. Yes, she called them 'chocolate squares' for a reason. Does that mean the chocolate was more fudgey? I mean, did she melt the butterscotch aand peanut butter into the chocolate?

I was thinking substitute the chocolate chips for butterscotch chips and the almonds for cashews.

The next time I get pulled over, on my oath, I am going to proudly exclaim, "Chef John says that I am the highway patrol of my mixing bowl!". I don't see that getting me out of a ticket but the look on their face is certain to be priceless.

Australian here - my mum used to use Maltesers (crunchy malty chocolate balls) instead of nuts. Also fruit flavoured chewy lollies (candy for Americans). Highly recommend. Great video as always!
His "Peposo" is one of our favorite recipes by now. On Friday I will offer the Rocky Road after the Peposo together with a nice espresso to our guests.... But there will be a small addition: Some cayenne pepper. Chocolate and pepper/chili work together well...
My sister made something similar to this often when we lived at home. She called it "Chocolate Goop."

Thank you chef John... Something similar to this, (in Indian state of Kerala) is made from melted Jaggery+ butter; into which are added broken peanuts...locally called Kappalandi (Peanut) ~mittaayi (Jaggery candy)... which is displayed in transparent glass jars, matches chef's description of "rocky roads"😍

Coming from Australia usually there is jelly ( french jelly) or even Turkish delight pieces through out as well. Though the Turkish Delight addition is not common but is a nice change to the usual red jelly pieces.

The first mix of this episode was the most half-hearted mix I have yet seen on this channel, which is something considering how mellow the production quality of this channel is.
Interesting that Chef John cut's it into 16 pieces and after stating that he's eaten two, there are only 12 on the platter. Just say'n.

My birthday which is today had many years of stained glass window candy as a gift. This reminds me of those gifts. Candy is a great gift.
Thank you for this recipe! I did this recipe tonight and it was awesome! I didn’t follow your recipe and I made it in the crockpot which came with some problems but my wife and I love it anyways. Two things I did differently: 1. Added slivered almonds and crushed walnuts. 2. Added junior mint candies when it was melting and it gave it a slight minty flavor. Thanks good sir!

I grew up on these except we didn’t use nuts. Just the chocolate chips, butter and multi coloured marshmallows. We had them at every birthday party in the 70s and 80s. Great memories! I still make them every Christmas!
I have a friend who used to make a yummy treat. She mixed together Chinese noodles, the salty crunchy kind, mixed them with marshmallows, some kind of nuts and raisins. She would place little mounds of this on wax paper and pour some melted chocolate over each mound. After they hardened, she would peel each one off. Simple but delish.
I had a neighbour that used to make this with a graham cracker bottom and they were so delicious. Thank you Chef John for the memory reminder and the tips!!!! 🌲❤ MERRY CHRISTMAS AND GOD BLESS YOU ALL ❤🌲

I make these with white chocolate, granola and raisins (here in Brasil we have sort of a chocolate bar candy called Talento, which comes with various combinations of chunks, like dark chocolate with hazelnuts, milk chocolate with castanhas-do-pará, dark chocolate with walnuts and raisins, and that one made with white chocolate mixed with granola and raisins is my favorite).

I felt the urge... so I made this. But I used milk chocolate, against John's wishes :) I absolutely hate dark chocolate. 2 Lindt milk chocolate bars, 3T butter, no added syrup or anything. They were quite good.

We have all been on a rocky road this year. We need something yummy for stress relief.
Darryl Lee, probably the most famous brand of rocky road here in Australia, originally only made milk chocolate, they only started making dark chocolate years later. They also use peanuts. Home made, back when dinosaurs roamed the earth, it frequently had red glacé cherries, but now days it tends to have jelly lollies like chopped up snakes or jelly babies. Pascal (brand) vanilla & strawberry flavoured marshmallows, are better, they’re much more flavourful and softer than the minis. Can’t say i’ve ever had it with vegemite in it, but you’re welcome to try it. 😂

In the UK we add biscuit pieces (usually digestive biscuits which I hear are our version of a graham cracker) and sometimes raisins. I would also recommend malteasers or other round sweets. The version you made is very restrained if you ask me 😛

The story of me making these: >Chocolate/syrup/butter mixture instantly seizes as soon as i try to blend >I do a second batch, since I misread the recipe and accidentally bought twice as much chocolate (2 wrongs do make a right?) >It goes better, doesn't seize >tastes heavenly >mixes the warm chocolate mixture with the marshmallows >instantly seizes, and the marshmallows melt >1/3 of the pan gets filled with semi-seized melted marshmallow/chocolate/almond goop. 7/10 best I've ever managed

You forgot a step after not smoothing it out, because it's called Rocky Road, not, Uneven Pavement. That step would be to lick the spatulas clean.

Dark chocolate is supposed to have health benefits, as do nuts. Two healthy main ingredients cancel out the empty calories of the marshmallow, therefore this is good for you.

You certainly could. A little spice is supposed to go very well with chocolate. Or even mix it into the melted chocolate.

If he's using 'salted' almonds, you can go and put any amount of cayenne in your dusting. "As always, Enjoy" *winks*
My wife just went to Shortsville last weekend and said the roads were not rocky. And when I went to Canadaigua the roads were much smoother than Norwich.
I usually mix marshmellow, cookie and cranberries with chocolate during christmas time. White chocolate ones with the cranberries are amazing

True .. have been making it for years .. and there you go ... true we are more simple in our desires .. chocolate marshmallow almonds ... that's it. We've always had Pascall marshmallows though, so pink and white has defn. been a thing in Aus.

note: there was an antediluvian joke about our roads here where a comedian said: "the pavement here are like the backside of a nutty chocolate."
From the UK, there has to be crushed "rich tea" biscuit in this, reducing the marshmallow to compensate
