Cheap Vegan Meal Ideas for Students!

Today we’re making 4 super cheap, easy and filling vegan meals. Perfect for back to school season! We’ve got vegan burritos, pasta, curry and a candy bar oatmeal in this one.

INGREDIENTS
#1 Veggie Burritos
250g rice, dried (~ 1 ⅓ cups)
1 small head of broccoli
200g cremini mushrooms (~ 7oz), OR 3 bell peppers
1 onion
1 tsp coconut or olive oil
1 tsp agave
1 tsp soy sauce
1 can beans
nutritional yeast
1 avocado or 1 mini tub of guac that happens to be on sale
hummus
marinara sauce
tortilla chips, optional
4 tortillas
→ serves 4
~ 0.65 € per serving
#2 Peanut Butter + Potato Curry
~250g rice, uncooked (8.8 oz)
4-5 yellow potatoes (300-400g) (12.3 oz)
1 onion
1 clove garlic
1 small piece of ginger (~ 2,5 cm)
1 tbsp tomato purée
1 tsp curry powder
salt, pepper to taste
1 ½ cups veggie broth (375ml), more if needed
1 tsp cornstarch + 1-2 tbsp water
a pinch of cumin
the juice of 1 lemon (start with half a lemon, see if you need more)
fresh parsley
~ 0.65 € per serving
→ serves 4
#3 Creamy Nut Free Mushroom Pasta
180g pasta (6.2 oz)
1 onion
250g mushrooms (8.8 oz)
1 tsp coconut or olive oil
1-2 tsp vegan butter (optional)
1 tbsp spelt flour
¼ cup veggie broth (60ml)
¾ cup unsweetened soy milk (240ml) (more if needed)
½ cup soy creamer / soya cuisine (125ml)
1 tbsp nutritional yeast
1 tsp mustard (optional)
a handful of parsley, fresh or frozen
salt, pepper to taste
1 tbsp fresh lemon juice!
{if needed 1 tsp cornstarch + 1 tbsp water}
→ serves 2
~ 1.25 € per serving
#4 Peanut Butter Banana Porridge
1 banana, ripe and mashed
½ cup oats, rolled (45g)
a pinch of salt
1 tsp peanut butter + more for the top
¾ cup water
a splash of vanilla non dairy milk
toppings of choice: crushed peanuts, chocolate chips etc.
→ serves 1
~ 0.30 € per serving

    Sooo basically... for example employee in Mcdonald make like 15 zł per hour in Poland. And avocado is like 8 zł. Even in,, season " if you want avocado Hass is ofc mooore expensive. Love for avocado Is painful for my pocket XDD i buy them anyway. I'm living for them ❤️

    in brazil there are two types of avocado, one is really cheap but we usually eat it adding sugar or making vitamins. the other one is REALLY expensive and hard to find, which is basically why they aren’t common in here

    Some thing that we make here in Mexico with the beans is "refreir" and that means: you drain the beans, put onion and oil on a pan and after you add the beans and smash them until everything becomes a paste .. That process give the beans a really good flavor and the burrito taste waaaay better

    If you rinse your rice (cold water until water runs clear) before cooking, it will come out a lot fluffier and a lot less gloopy. You want to wash out all the starch and pesticides (or the occasional bug or pebble or two if it’s pesticide free) in the rice so I would highly highly HIGHLY urge you do that. It honestly baffles me when a person doesn’t wash it like they would with any other produce or grain. I promise the texture will be a lot better!

    could you maybe do more "back to school" kinds of videos? for example, make ahead/quick breakfasts, lunches on the go, quick & easy dinners, snacks on the go etc. That would be so helpful! Also, maybe dishes that would work well if you've got friends over who aren't vegan? btw where do you get your nutritional yeast from?

    The black paste is called tamarind, it's a sour fruit which is used for almost every single recipe in South Indian cooking (you will find a gold mine of vegetarian recipes that are automatically vegan). It's used for Pad Thai as well, so maybe you should try making pad thai! ^_^

    yup Somalis use it for hot paste we put on grilled fish. Also the capitals name might be legally Mogadishu but its always been known to locals as Xamar which means tamarind.

    @@odette6328 1 cup once soaked they become a lot more in volume then a single can of beans 1KG of dry beans becomes and insane amount once soaked. A LOT more then what you would have to pay for the volume that is in if it were canned and already boiled , so no, you're wrong.

    I’m not sure if anyone said this but, the reason the onions in the burrito recipe were so small is because they were shallots! Shallots are similar to onions but are sweeter and more mild. They are best used raw instead of cooked. Yellow or white onions are usually better for cooking because they have a sharper flavor 😊

    Those were not shallots (at least I think). shallots are usually slimmer and have a distinct purple-ish colour. Those were just small white or yellow onions.

    I think those were either Dutch yellow shallots or just small onions. Usually shallots are light purple inside and have two elongated bulbs, instead of one round bulb. It's hard to tell what they were from the video, though.

    Hii, the black (kinda) paste is a syrup made out of a tropical sour fruit called "tamarindo". In central and south america is mostly eaten in candy or sweet recipes but in India, Thailand and Pakistan in mostly consumed in salty recipes such as curry, pad thai.     awesome video this helped me so much on my road to becoming a vegan, as far as coconut oil, just use olive oil, and if you are concerned about your health, get a blood test to see if your cholesterol is being affected in a negative way. and let's be honest people most of us arent eating foods that are good for us, so worrying about coconut oil is silly. When you stop eating sugar, white flour and all junk food then and only then can you argue about the negative of coconut oils. Most likely you wont die from using oil, but you may die from consuming chips, cookies, candy, fried foods and all the other crap you eat. This girl is at least is eating a plant base healthy diet. Awesome job Mina!

    I made the veggie burritos last night and omg, they were sooooo tasty. At first I thought the combination of ingredients would be weird, but I was proven wrong. Thanks so much for this recipe, it worked great for me. It was cheap and I had plenty left over afterwards.

    @lelwut Starvation?? Malnutrition? Those meals that where shown here in the video looked pretty filling and full of diffrent nutritions. And as far as I'm informed,, the only thing you will lack on a vegan diet is B12. Vegans can get all their carbs, fats, proteins etc. from plants. Also,, I'm sorry if I'm hard to understand. English is not my mother tongue.

    @lelwut Sorry but I'm only getting the notification that you answered now somehow. Anyways,, can you please explain the term "antinutriens" to me because I've never heard that word before. And there are a lot of vitamins and minerals in vegetables, fruits and grains. The meat is only the "carrier" of those because the animals eat said vegetables and grains. I can't explain it properly due to my lack of the english vocabulary but I would recommend you to watch the documentaries "What the health" and "Gamechangers" on Netflix if you're able to. And yeah, I hope you have a good day or night depending on the time you're reading this~

    These all look great but you need to salt things before you sauté them. It will improve everything 100% and it helps bring the water out.

    Love the easiness of the recipes but they have very little protein, maybe try adding some more nuts, seeds and beans! Blending chickpeas or nuts into sauces is an easy way to incorporate them

    Kyra Smith literally no one who is eating enough calories is running a protein deficiency. Studies have already proven that both vegetarians and vegans get in enough protein and often eat more than is necessary

    somalis use tamarind that to make paste for grilling fish, its sour and goes well with seafood. Also, little known trivia Mogadishu is not a name locals use for the capital but Xamar which means tamarind since it grows there. lol

    I'm afraid that some of those dishes (except the 1st one) has some proteins missing. The cheapest source of proteins are: peas, beans (white and red), chickpea and tofu - you should consider adding them to your dishes ;)

    Freeloader259 i haven’t tried it but i imagine that it tastes pretty good. the soy sauce and agave used in the sauté would probably just add some salt and mild flavor. you could do other flavorings too, or leave the agave out if you wanted. i assume the hummus and marinara would be good together because hummus and vegetables/red pepper paste/etc goes well with it. you could also use salsa or pico de gallo

    I tried it today and didn't use the marinara. I knew as soon as they said add marinara I wasn't about to do that lmao. It was delicious though! I love the hummus, nutritional yeast, and guac flavor combo. I also used bell peppers instead of mushrooms and it was so yummy.

    Thank you for sharing this budget friendly recipe. Budgeting better with my groceries has been heavy on my mind with all the rising prices. This kind of video is so helpful for me and I am sure many others right now. I try to budget best I can but I know I can always learn more.     Excellent recipes, they seem really gummy and easy to cook, thank you for this video, is very useful and practical cause i'm becoming vegan at the time, to take a posture to climate change,i just like to mention one thing that makes me noise, the use of so many packages for the vegetables, for example the avovado package its so unnecessary and contaminated, i'm from Chile and the production of avocados for the consumption in usa and europe, its making us being in one of the biggest drough in the history of the country, cause the companys are stealing the water at the people and our government allows it, cause they act like an alliance, i invite you and all that take the time to read this, that are informed and take conscious, and take posture of the situation it's really critical here. greetings from Chile(and sorry for my lousy english, i hope the message its understood)

    I'd like to point out that besides recent research that the consumption of coconut oil does not really benefit your health (and might enhance cardiovascular problems) even though it's been advertised as a superfood and especially for vegan cooking - but regardless of that it's far from being cheap compared to other (and from a nutritional point of view much better) vegetable oils. So it does not help much if most of the ingredients are super low in price when the bill gets smashed by a jar of coconut oil which, as you certainly know, costs at leat 4-5 € for even the smallest jars. Also it's not very versatile for cooking (tho cool for a lot of baking stuff I admit) since you don't really wanna go for that coconutty flavour when you opt to make, for instance, an Italian dish. Anyways, still great food - I'd love to know where you got that native guac from and where you buy your tortilla wraps - I only find those really small ones that are so frustrating to roll up when you put in more than like 5g of filling.

    Apart from the discussion about health benefits etc., you gotta keep in mind that the "cheap" refers to the price per portion. If you buy a sack of organic potatoes in Germany, you pay up to 3€, but you don't use all of them (except if you really like potatoes). Therefore, one serving might only cost 50 cts. As for the coconut oil, if you use it cautiously, a jar can last up to a few months and one portion, the few grams that go into one serving of food cost about 5 ct. Sometimes you have to invest once to eat good and cheap for weeks if not months.

    I've heard that coconut oil thing as well! I was also kind of concerned about boiling the potatoes in the curry itself, since you're usually supposed not to reuse the water that you boil the potatoes in because of the solanine which enters the water while cooking. Solanine can cause health issues like headaches, diarrhea or vomiting and you get rid of most of it by boiling and peeling the potatoes.

    Rada 800 There's maybe some conflicting science on your initial points, but cooking with coconut oil definitely doesn't reduce cholesterol- I think on that point, almost everyone is in agreement that it does the opposite (like with any oil).

    I made the burritos changing the marinara sauce for cherry tomatoes and the brocoli for peas... They were AMAZING!
