Easy Meals using what you have at Home (vegan, tasty)

Hello there! For this video I challenged myself to come up with 4 delicious vegan meals, only using the things I already had at home. The result was these super tasty chickpea breakfast tacos, a cozy and quick miso noodle soup, crispy shredded pancakes (my attempt at Kaiserschmarrn lol) and a super easy to make crunchy tofu & peanut rice bowl.

INGREDIENTS & NOTES
#1 Chickpea Breakfast Tacos
½ can rinsed and drained chickpeas (120g = 4.23oz)
1 onion
olive oil for the pan
a dash of cumin
a dash of paprika
¼ tsp garlic powder
¼ tsp chili powder
(or add any spices however much you wish)
1 ½ tbsp tomato purée
⅓ cup passata (80ml)
⅓ cup vegetable broth (80ml), more if needed
salt to taste
1 tbsp vegan butter
1 ½ tbsp tapioca starch*
⅓ cup + 1 tbsp soy cream** (90ml)
¼ tsp garlic powder
2 tsp white wine vinegar
generous pinch of salt or to taste
optional: pinch of black salt/kala namak for egg flavour
optional: handful of vegan cheese for cheese flavour
1-2 tortillas
other add-ins: spring onion, spinach, parsley, sautéed mushrooms, pickled cabbage ...
*can be subbed with cornstarch - the result will be a bit less “fluffy” and more like melted cheese
** soy cream will give you that bright white color and a richer flavour, but can be subbed with oat or soy milk - then the result will be a bit more brown in color and a little more thin, but still tasty (more like cheese sauce)
→ serves 1

#2 Quick Miso Noodle Soup
1 handful of dried mushrooms (like shiitake)
1 clove garlic, finely minced
olive or veg oil for the pot
1 tbsp maple syrup
2 tbsp balsamic vinegar
1 tbsp soy sauce or vegan worcestershire sauce
optional: sriracha to taste (like ½ tsp?)
1 spring onion, chopped
1-2 tsp miso paste
1 ½ cups vegetable broth (375ml)
1 handful frozen peas
2 handfuls frozen edamame (or any other frozen veg you enjoy)
3-4 toasted seaweed sheets
~ 50g glass noodles or sub with rice noodles, regular pasta even (1,76oz)
→ serves 1

#3 Crunchy Vegan "Kaiserschmarrn"
1 cup + 3 tbsp all purpose flour (120g + 3 tbsp)
1 1/4 tsp baking powder
4 tbsp sugar
1 tsp vanilla sugar
1/2 tsp salt
2/3 cup non dairy milk (160ml)
1 tbsp apple cider vinegar
1/3 cup aqua faba = chickpea liquid (80ml)
1-2 tbsp vegan butter for the pan (add 1 before baking and 1 after baking)
1 ovenproof non stick pan
optional: 1 handful of raisins, either add to the pancake mix or to the cooked pancakes before serving
Serve with vegan cream, vegan yogurt, apple sauce, berries, powdered sugar …
serves 2

#4 Tofu & Peanut Rice Bowl
2 servings of cooked rice
for example cook up ¾ cup rice (135g) + 1 ½ cups water (375ml)
For the crispy tofu:
1 block firm tofu, cut into nugget shapes (200g = 7oz)
2 tbsp natural runny peanut butter (sub w almond butter? white tahini?)
1 tsp sriracha
1 tbsp soy sauce
1 tbsp nutritional yeast
1 very generous pinch of salt
all kinds of spices you like
4-6 tbsp water, more if needed
~4 handfuls unsweetened corn flakes
Optional: 1-2 tbsp sesame seeds or crushed peanuts to dip the bites into
!! Another pinch of salt to sprinkle over the bites before baking!!
2 handfuls of frozen broccoli
1/4 cup water (60ml), more if needed
Would recommend adding a bit of fresh lemon juice + salt to the broccoli before serving
Peanut sauce for serving:
1 heaping tbsp natural peanut butter
1-2 tsp soy sauce
1/2 tsp sriracha
1 tbsp lime or lemon juice
Salt to taste
3-4 tbsp water to adjust the consistency, more if needed
Feel free to make more sauce :)

    i was at a friend's house today and she didn't have a lot of vegan food at home, so we just cooked some spaghetti with a vegetable sauce. We sauted onions, bell peppers and tomatoes in a frying pan with oil, added soy sauce, vegetable broth and water and later seasoned it with basil and salt. Tasted incredibly good for such a simplistic recipe. Definitely recommend it. Would probably use some more vegetables if you have more at home.

    @@banana8715 they just said they were almost fully plant based, just because they aren't vegan yet doesn't mean you can sit here, not congratulate them on their progress, instead demanding them to go vegan. you are a stranger on the internet they don't know, so just saying 'go vegan' in a demanding way will only make vegans look worse. so many vegans do this and its tiring, we already know they're trying their best.

    Ok this is a Quick Tip but its really good: if you have pickeled beetroot then dont throw the liquid away! Combine it with some mustard and black proper and you have a quick and easy yet delicius Dressing to put in bowls or salads

    This video is so helpful (and relatable). I recently was trying to use up pantry goods and made a vegan rice “pudding” for breakfast. I cooked rice in coconut milk, added turmeric and coconut sugar, and then stirred in some ground flax seed to give it more of a “pudding” feel. i topped it off with some chopped nuts, chia seeds, and frozen mango and it was amazing🤤

    Just letting everyone know, if you're new to veganism or something and you try the recipe with tofu and cornflakes, make sure the brand of cornflakes you're using is vegan friendly because most well-known ones are not

    If you like using seaweed in your food I would totally recommend buying dried seaweed (Seetang) from the Asian market, instead of using the toasted nori sheets. They are much more expensive than the dried ones and have less flavour.

    I like to make mediterranean couscous/ rice bowls with: chickpeas/ peas + cherry tomatoes/ cucumber (any kind of veg) + olives or dried tomatoes. I usually make a tahini sauce with sriracha, sometimes leftover yogurt and frozen herbs

    I haven’t been grocery shopping for a while but I have t.o.n.s of watermelon rind jars in my fridge, that I had made into jam, tsukemono and kimchi, so my go to meal these days is a bowl of cooked cereal (black rice, quinoa, jasmine rice…), watermelon kimchi or tsukemono, a few beans (chickpea, kidney beans, green peas, lentils…) and a few mushrooms (I always keep dried shiitake and black mushrooms, and often fresh enoki mushrooms in the fridge, they keep pretty well)

    And yes, yes, definitely do these kinds of videos, love them! So random but so good! I made panzanella (bread salad with tomato, cucumbers and Italian style vinaigrette) and I needed some protein so I made chickpea croutons in the air fryer.

    ive been vegetarian in the past but had to stop because i was at a really low point in my life where eating was difficult. eating now is still difficult for me but i really want to put more effort into it again and finding your channel has really shown me its not as complicated as it seems! im really excited to try some of your recipes in my near future :)

    As an Austrian I've tried replicating Kaiserschmarrn lots of times and from my experience, using aquafaba is not really necessary (even though the traditional recipe calls for egg whites). You can just make kind of a thick pancake batter containing flour, sugar, plant based milk, apple cider vinegar, baking powder (this is important), vanilla, a pinch of salt and if you want a chia or flaxseed egg. If you want to try it: First combine 1cup of plant based milk with 1tablespoon of the vinegar. Combine 1.5cups of flour, some salt and baking powder. Add 2 big tablespoons of sugar to the milk, then add the wet to the dry ingredients and mix. Add the flax egg and stir. Bake it in a generously oiled pan (vegan butter oder sunflower / rapeseed oil) until one side is golden brown, then flip it and instantly tear it into smaller pieces and then let them cook till done. Serve with apple sauce or plum compote and powdered sugar. I've made this for lots of non vegan friends and family and they all loved it and couldn't really tell the difference.     Wait actually we cooked the Kaiserschmarrn in a pan! You pour the dough in so it is a really thick layer and then when it's golden to dark brown you cut it in 4 pieces so you can flip it. Then wait until it's brown on the other side and use a spatula to make little pieces. But I guess it doesn't make that much 9r a difference in the end 🤷‍♂️

    I wish I could eat like this! It just looks so healthy and delicious. for a few months I could keep it up but because my parents don't eat this way I can't really now, plus I'd have to spend a lot of time making every meal, and I end up eating unhealthy processed takeout lol.

    Quick tip if you don't have tortillas or wraps at home or just want a small amount: mix 200g flour, 100ml water, 8tbsp oil and 1 tbsp of salt, let it sit, form little tortillas and bake it in a pan without oil et voila. :) since we've found this recipe we've never bought pre made wraps again

    Completely random freezer cleanout resulted in toasted buns topped with my homemade chili and some mustard -- reminded me of what chili dogs used to be like. It was a good way to use both up on a hot summer day -- just took the microwave and the toaster.

    Mina if you like choc mint flavour you should make this slice, it’s really good and it’s healthy :) Combine in a food processor 1 cup dates, 2/3 cup sunflower seeds, 1/3 cup pepita seeds, 2 heaped tablespoons cocoa powder, 1 tsp mint extract, 1 tablespoon coconut oil, a bit of maple syrup to taste and water to get the right consistency. Blend everything together, press into a slice tin and cut into big slices.

    I make these cheesey rice bite things - super simple and yummy. Just leftover cooked jasmine (sticky) rice, grated vegan cheese and Old Bay seasoning (I found it in Makro as I’m in the UK) Mix with your hands then form into little patties and oven bake for about 20-30 mins - they go super crispy on the outside and edges but really delicious and comforting! 💯 recommend

    Quick tip for the tortillas, if you want to save them while keeping them soft you need to put them on a kitchen tower/ piece of fabric and save that on a plastic back, they remain soft for over a week (probably longer)

    Honestly the chickpea breakfast tacos look amazing!! Ive been considering trying to eat more vegan alternatives, although I just dont think I could fully convert do to the ingredients available where I live.

    @Dasherwind , don’t consider it any longer, just do it! Give it a go! Just BOOM! Like that! Most people regret not making the shift earlier, so save yourself that regret 😉 Besides, as far as ingredients are concerned, if you focus on whole food plant based meals, every country has plenty. My repertoire of vegan dishes is made of recipes from all over the world : India, Japan, France, Spain, Italy, Lebanon, Morocco… All delicious and filling. The only real limit is your imagination and your willingness to make the change.

    @@dasherwind5392 I live in France and in most cities vegan alternatives just do not exist! I recently moved to Paris and now I can enjoy alternatives… which I seldom do, because, again, I focus on plants, unprocessed foods, and whatever processed “alternatives” I want I just do myself! Price is really not an issue! I make soy milk, soy yogurt, tofu, and okara (soy pulp) cheese spreads. I make delicious tofu mayonnaise and chickpea tuna, I make seitan from scratch (my mother taught me when I was 12), beans, lentils, and mushroom burgers. I recently started making eggs from split mung beans, I use aquafaba for meringues, and I could go on and on. The only expensive ingredient I use is nutritional yeast, but I found that white miso and marmite could do the trick for many recipes and they’re cheaper. Honestly, I spend less now, being vegan.     the black fungus that you are referring to are actually called "wood ear mushrooms"! theyre aboslutely delicious in dishes like japchae, a korean starch noodle dish made with vegetables.

    Black fungus is also called wood ear -- we eat it a lot in Chinese dishes. It's very similar to a mushroom but not quite the same thing :) there's also a white version that we use in desserts!

    I've had this opened Miso paste in my fridge since forever and some time ago I panicked cuz it was expired (pro tip: it's fine, it's the perfect staple food. Don't worry.) -- now I add it everywhere. With spaghetti, in pesto, to glaze eggplants, into my stir-frys, etc.

    If I've got an onion, seasoning and canned beans I love making refried beans! They're so quick and easy and can be added to cooked leftover vegetables to beef them up a bit :)

    I made recently a quick and delicious spaghetti with pesto sauce made in food processor with using the leftover broccoli stalk, peeled and just steamed for a few minutes, adding also a heaping handful of parsley, some basil leaves, one garlic clove, two tablespoons of pistachios, three heaping tablespoons of yeast flakes plus just a bit of crushed nori sheets to get some more umami flavour and olive oil to get the right consistency. To garnish the dish, I put on the top some frozen broccoli florets fried for a few minutes on all sides in hot olive oil, some raw, just choped cherry tomatoes and some basil leaves plus a sprinkle of homemade vegan parmesan mix or just some yeast flakes. It was sooo good, than I highly recommend to try this❗😋

    i love your content so much!! the videos are so comforting and the recipes i actually use after watching you making the dish, thank you for creating so much comfort!! ps. i did banging pasta sauce with leftover cabbage, carrots, tomato puree and hummus also with any leftover stuffing if you're tired of tacos you can just fill bell papers with it and bake for 20 mins in the oven, very easy and quick))

    The mushrooms you had looked like wood ear mushrooms! :) They’re commonly used in Korean japchae. Maybe you’d be interested in making a vegan version of japchae? It tends to be a favorite Korean side dish among non-Koreans who try Korean food.

    Ich mag solche Aufbrauchen-Videos sehr :) Ich habe immer fertigen flammkuchenteig und Blätterteig im Gefrierfach. Den flammkuchenteig belege ich dann random mit Gemüse, Aufstrich, Tofu etc. Was noch so da ist :) Für den Blätterteig mache ich häufig ein pfannengericht (zb Kohl, Soja geschnetzeltes, anderes Gemüse, Senf) und wickel es dann als Rolle in den Blätterteig :) auch sehr lecker. Organisation deiner Küche ist übrigens auch ne tolle Idee:)

    for the kaiserschmarrn - my grandma makes it in a smoking hot pan and doesn't use an oven, just aggressively tears it apart with a wooden spoon until she gets small bits and then lets them to crisp up

    dried black fungus is also known as wood ear mushroom. it's different from shiitake.
