Breakfast in a glass? You bet. This South American "drink" is chock full of unique regional ingredients like Mote and Quince. FULL RECIPE BELOW.
Champus
Serves 6
INGREDIENTS:
1 Cup of Mote
- soak dried mote overnight
- the next day, cook until soft, around 1.5 - 2 hours
- set aside and move to liquid base
LIQUID BASE INGREDIENTS:
-rind of one pineapple
- 3 1” wide strips of orange peel
- 2 cloves
- 2 cinnamon sticks
- 2 cups guanabana puree (soursop)
- 3 cups water
Instructions for the base:
- Place pineapple rind, cloves, cinnamon, and guanabana puree into a medium sauce pan with 3 cups of water.
- Peel orange over pot
- Turn on heat and bring to a boil.
- Turn heat down and let simmer for 10 minutes, then turn heat off completely, and allow to infuse for at least an hour and up to two.
- When mixture is finished infusing, strain through cheesecloth, squeezing to extract all the liquid.
PORRIDGE INGREDIENTS:
- ½ cup sugar
- 1 quince, peeled, cored, and cubed into small dice
- 1 apple, peeled, cored, and cubed into small dice
- ½ pineapple, peeled, cored, and cubed into small dice
- 1 cup soft mote
- 1 cup harina de maiz, aka yellow cornmeal
- 2 cups cold water
- pinch of salt
- 2 oranges, juiced
- additional orange for zesting
- cinnamon sticks for garnish
Instructions for assembly:
-Pour the liquid base into a large sauce pan, bring to a simmer, add the quince and sugar. Cook for fifteen minutes.
-Chop apple and pineapple
-Add apple, pineapple, and mote, then simmer for another 25 minutes until fruit is very soft.
-Meanwhile, combine 2 cups of cold water with one cup of yellow cornmeal and a pinch of
salt in a large bowl and whisk to remove any lumps.
-When fruit is soft, turn the heat up to medium high. Whisk the cornmeal and water mix gain, scraping the bottom of the bowl, then pour into the hot fruit mixture in a thin stream, stirring constantly with a wooden spoon to avoid burning or clumping.
-Cook for 60 - 90 seconds or until mixture begins to thicken.
-Immediately remove from heat and add the orange juice.
-Stir well to combine; the juice will both thin out the porridge and cool it down so it’s ready to eat. -Ladle into mugs, garnish with orange zest and a cinnamon stick.

Thank you so much for making this since I was one the people who requested it a long time ago!!! However, even though this is similar to the champús we make in Colombia, it's not even close. But I'm assuming it's a version from another country. In Colombia we always use hominy corn instead of mote, panela (sugar cane) instead of white sugar, and lulo, instead of soursop. Oh! we make it thinner because we only serve it either to drink alone or with a side of empanadas or pandebonos (cheese bread). Lovely video though! I truly enjoyed listening to Lucho Bermúdez, which was one of my dad's favorites. ♥

My Mother is from Colombia and I grew up hearing a lot of cumbias and south american music and this song was my jam! haha Great video as usual! :)
This looks more like a porridge than a drink but I'm not complaining. It looks like it had loads of fiber and deliciousness.
I'm from Colombia and Champus, is a typical drink made in "valle del Cauca", specially in the cities of Cali, Palmira and Buga.... the taste is absolutely delicious, and it's worth to try, despite the hard work. Actually we drink (or eat it) cold. The citric taste is very refreshing.
Cali, Valle del Cauca, drink is delicious in hot day´s is soo good.
I tasted champus ten years ago in Cali, Colombia... it´s so delicious !!! ... Mote is knowed in Mexico as "NIXTAMAL" ... even you can find it cooked in bags and cans ... thanks for sharing guys!!!

I imagine that a few of these steps can be done up through the night before, then the whole thing assembled in the morning, since steeping the base and cooking the mote (aka hominy or posole, to make things easier for everybody!) takes so long.

You should try Swedish Nyponsoppa - Rose Hip Soup. It's also very thick and sweet and nourishing - and is hell to make from scratch!

How about Nicaraguan pinolillo . toasted and ground corn, cacao and cinnamon. A drink so gravelly you'd swear you were drinking sand and a smell so sweet you'd think its chocolate milk. An acquired taste of course.

While I appreciate the effort that you guys put in to make this drink, I just don't really feel like it's a practical recipe for most people. It takes way too long with way too many steps. I don't care if Obama is coming over and requests this drink--I would never spend my time this way! :)

It's delicious, ir is filling but at the same time really refreshing. I'm colombian and I can tell you that it 's definitely worth it :D
