    As a chef. I know most of these fish are tolerable without seasoning but the mullet is the only one that actually has some fat so with seasoning/preparation a big mullet it absolutely fantastic. Especially smoked.

    Best to harvest them in the fall. They have a much higher fat content then than they do in the spring and summer.

    My brother, rip, was considered to be one of the best ceviche makers in our circle. Whenever we had a gathering, people always requested his ceviche. People always asked why it was so good, and he said it was his secret ingredient. Eventually, he gave in and told us it was mullet. One of his fishing buddies wouldn’t believe him, so they went out and caught some fresh mullet and made ceviche out of them. Was he surprised that my brother wasn’t lying. He refused to eat his ceviche after that. 😂

    I grew up in Florida on grits and mullet, smoked mullet, mullet salad and other uses. I'd take some Pinellas County mullet smoked over smoked salmon. One man's trash is truly another's treasure.

    as Vince from Landshark Outdoors always says, “no trash fish, only trash cooks!”😅 That guy’s fishin channel was the one channel that completely rewired my thinking about “trash” fish. Because there are none. Some, however, are more difficult to prepare and cook correctly.

    @@aarias886 I'd never ever eat mullet from the Charleston coast. Really really dark and mushy. The Texas mullet was way whiter. Shocked me to tell you the truth.

    As the old joke goes, you can make a wood plank fit to eat if you work at it. Trash fish are the ones that aren’t worth the effort to make sort of edible.

    Fried Gaftop are good to eat. You have to catch a decent size one, like the one you caught, in order to have enough meat to eat. Gaftop are mostly bone.

    Gaftop are basically the same as freshwater catfish without the mud taste! It’s due to the fact of their diet being better and the water they live in constantly moving instead of sitting stagnant!

    yellow corn meal, salt and black pepper that is all you need to fry mullet fillets. Spent my child hood tearing them up.

    Smoke or grill the mullet with some wood chips. If you cook it any other way brine it in salt water overnight to help leach out the fishy flavor. You could even make a smoke mullet spread with cream cheese. I used to cast net for mullet here in Florida when I was younger and had more free time. It really doesn’t deserve F tier if it’s cooked the right way.

    In the northern half of Florida mullet mullet is widely consumed. Also the gafftop catfish is considered a lucky catch because they are great eating.

    NICE! We used to eat "Biloxi Bacon" (in Biloxi, MS - big surprise!) Fried mullet filets. People would line up to get them & they sold out quickly each night! They were delicious. I have recently heard that our Texas and LA waters are too muddy for sweet tasting mullet, unlike those nice sandy clear gulf waters from MS ~ FL.

    Well done I haven't eaten mullet but I am looking forward to it, you might of psyched yourself out of it. I've eaten everything I've caught at least twice to include barracuda, bonito, jack crevalle, ribbonfish & moray eel I won't bother with the moray's anymore its allot of work and not all that taste wise but can be eaten the rest mentioned are part of the menu / make sure you catch the mullet in sandy areas for cooking

    0:17 let me stop you right there. The gaff top a K sailcat is excellent table fair just as good as any other catfish people just don’t like to mess with them because they’re slimy. We have different words for people like that down here in the south, you cut that red meat out the center, you catch the big ones and you run that fillet knife a little bit above the skin line so you get none of that darker meat 90% of people will never taste the difference between the two fish or ever even noticed a difference.

    I have had redfish, speckled trout and gafftops when I was visiting the area over the years and although they arent in the same flavor tier, I feel gafftops are still a decent fish to eat when fried. I have never had a bad piece of fried gafftop so far, as long as you cut off all the red from the meat. Thanks for the vid Coop!

    Hardheaded have a very strong taste. Not pleasant at all. Gafftops are ok. Not award winners but decent.

    Gafftop is great ! roll it in corn flour and deep fry it. the flesh is firmer than I would've thought but still tasty. in Florida they make this fish dip out of mullet, I didn't try it , but the locals say its good. never ate a hardhead , but ive eaten bullheads and they're ok if the water they come out of is fairly clean.....

    Gaff top, mullet, aren't bad if it's cooked correctly! With that said, my great great grandparents ate everything that was caught, shot, trapped! The funniest thing I ever heard from my great great grandmother tell my great great grandfather not to ever bring home another armadillo for her to clean and cook! Lol

    Smoked mullet is the way to go. If you’re ever in St Petersburg, FL (“Tampa Bay Area” for strangers) you have to go to Ted Peters Famous Smoked Fish. Been eating that stuff for nearly 50 years when I go back home. Mullet in Galveston I wouldn’t eat.

    I have always been told fried gaff chunks are the way to go. All older fishers I have asked said fillers are 50/50. I have also been told the Whiting are really good also.

    Gafftop are pretty good eating, just make sure and leave the red behind when you fillet them. A soak in buttermilk helps. Also, they're somewhat venomous so don't get poked or you'll have a short trip to misery a couple hours. I tried mullet once and didn't think it was that terrible, but it was beer battered, fried, covered in tartar sauce and was washed down with large quantities of beer. My perception may have been skewed a tad. As for hardheads, they're just all-around nasty. Another nasty fish in my book is the blue runner. If you can even make it past the smell, the taste is still worse.

    We catch mullet +/- 20 miles or more upstream from the bays, in rivers. Seasoned, battered, and fried, they're delicious...I also can them, and they can be made to taste like whatever you want them to, then. Hardheads are the ones most people here don't eat, surprised you thought it was better than the mullet. Stay Safe!

    Thresher may I suggest a ceviche episode!😅 I love that stuff. And I did an experiment. Super simple. I had caught a Spanish Mackerel and a Sheepshead witha guide in Louisiana, and I asked him to give me the fillets right away while he bagged the other fish. I took lemon juice. I soaked the fillets in the lemon juice for one hour. And I ate them! The lemon or lime juice “cooks” it. I sprinkled a bit of Tony’s on them. And then I ate them. Fresh off the water! It was excellent! Well for me anyway. The Spanish Mack “ceviched” better than the sheepshead because it is a softer meat. But they were both excellent.

    Gafftop is good and tasty! Cut out the veins and darker meat , gets rid of the fishy taste/smell. Hardheads are nasty (we tried it once lol). Mushy, no taste like marshmellow and oily. Never tried mullet yet, only used them for bait.

    I'm trying to get my kids into fishing but have been only getting hard heads and under slot fish... They kept asking to keep something, so I finally put a few hard heads in the cooler. I made sure to double bread and deep fry them and the kids thought they were great. Italian seasoned bread crumbs for the win!

    Mullet is pretty good seasoned and fried, but much better smoked. When I was growing up near Tampa, a few people kept sail cats, NOBODY kept hardheads.

    ive eaten the golden eye mullet from the surf, they are good, the darkeyed ones are the ones you dont wanna eat. mullet row is highly prized in italy, they cure it, its called botarga, and they shave it onto dishes like pasta, theres another dish where they slice it and serve it with artichoke and onions

    Tips for freshwater fishing If you’re fishing for king salmon in a river you should be careful because sometimes they will ram your foot and break your ankles and feet. Sometimes your shins.

    I ate fried whole mullet during a trip to the East Coast. It tasted ok, but was bony. I know a guy who tried eating hard heads. He said they were ok, but way too much work for the meat. I've never heard anything bad about gafftop. But I've never caught one large enough to mess with.

    We eat mullet all the time in Mississippi, call it Biloxi Bacon. It is usually coated in Zaterans and fried. Or it’s smoked then turned into smoked mullet dip. Now we would rather have flounder but mullet kept us alive during wars or depressions.

    Ive eaten both hardheads and gafftopsail cats. My only complaint is you have to either get a lot or a big one to have anything for a meal. I have absolutely no complaint about the mullet other than the scale not wanting to come off my hands after scaling them

    my dad and i caught some good sized mullet before and stuffed them with lemon and herbs and seasoned them and wrapped in foil and tossed on the grill and i actually enjoyed it. This was when i was a kid so i dont know exactly how we seasoned them

    Im a speck and red guy. But I fried mullet up one time and was actually impressed. Kind of sweet. Was expecting it to be gross. I’m in Louisiana btw. I have tried gafftop too and it’s ok. But I thought the mullet was better. Encourage you to try it fried and see if it’s more palatable for you.

    Gaftop are a really good eating fish, but beware the fins contain a toxin that is just like a rattlesnake bite. I found out the hard way! I got impaled just below the thumb on my left hand. The fins are barbed and do not come out of the wound without much pain. I finally got the fin out of my hand, made it to the house, and put my hand in an ice bucket. My hand swelled up double size, was very painful to the touch, ached for a week. Please be careful, I don't want anyone to share my experience.

    Gafftop are good eating, hardheads are not great if you catch them near docks/marinas. The further away from peopel the better they taste.

    Galf top makes the best fish chowder, I don't care for it any other way. I've eaten mullet but it's got to be a big one and soaked in butter milk for hours.

    Landshark Outdoors has a fantastic “trash fish” episode on ladyfish, among other trash fish episodes. It’s all in the preparation. Because they are so bony, the Landshark Outdoors guy just scraped all the meat and took out the pin bones, mixed it all together in a bowl with other ingredients and seasonings, and then made fish patties or fish burgers on the grill with it. Then he and friends all ate it in sandwiches! Fascinating! Ladyfish are not a trash fish after all! But, they do require additional preparation to get out the pin bones.

    Hey man followed you for a few years. I’m coming to Port A for the third time. I’ve only caught one trout off the jetty. Been fishing the jetty you go to. I am fishing live shrimp. Do you use a light rod or heavy rod for the slip bobber rig. Do you keep it up high or as low to the bottom as you can get and what line do you use? Is it braided or fluoro? Any tips would be greatly greatly appreciated. Just trying to figure this out one step at a time.

    Needlefish are considered a trash fish in the US, but in other countries they are considered good eating especially when smoked. I wonder if these fish would taste better when smoked?

    Was in Galveston a while back. Caught several gaf tops. to this kentucky boy, they looked and ate just like a channel cat from the river. yes lake channels and river channels taste different....

    😎What it Do?!! Gafftop are actually good to eat. They make a great stew and fry up real good. Eating a hardhead is just a waste of time. Mullets, yeah that’s a hard NO!!🤮I don’t know what they’re thinking in Florida, but then again we are talking about Florida!! Nice content though!! 🤙🏾💯

    Getting the red out is a must with most fish but in Florida mullet is a common thing but usually the bigger black mullet. And it's kind of an acquired taste. They also eat the row out of them. I don't like either. And like you pointed out, its a regional thing. Up north they eat carp 🤮

    I've eaten them all on the Bolivar. Gaftops and hard heads need to be big. Same with horse mullet. Filleted and fried, tasted like fish. I like fish.

    I heard mullet down here are only decent when you cook them immediately on a grill after catching them. But I haven’t been brave enough to try it

    Use cut hard head catfish and it works good for gafftops. I would always also catch king fish or whiting when surf fishing we ate them too

    To be honest, it you fry hard heads in some oil and season they taste exactly like chicken

    If you want a real surprise next time you catch an Atlantic Cuttless Fish aka ribbon fish you have to try it. I grew up with a commercial fisherman in Port Aransas and we couldn’t eat reds,trout,drum or flounder. So we ate everything else and my favorite was ribbon fish and piggy perch. One thing that you need to do when you clean ribbon fish is use a knife and scrape the silver skin off of the outside and cut them into 3” slices bread then add fry them. If you don’t skin them after you eat them it’ll look like you’re wearing braces 😂🤣😬 don’t ask how I know. Have you tried sand trout?

    Odd about the catfish. Freshwater CF are great eating. I am starting Surf Fishing in SC and was curious about fish flavors. So the whiting is what I need to keep, got it.

    Mullet is great no matter how it is prepared, especially winter mullet. Sail cat is OK deep fried. Mud cat is for the desperate and starving.

    I've always found whiting pretty bland. I've heard gafftop is tasty. Mullet (fried though) I've had plenty of times and it's probably my favorite out of all of these you tried. The only downside is that they tend to get mushy and strong tasting if you do not cook them the day you caught it (like Bluefish actually). Never had hardhead and the main reason why I watched! Good to know we have a famine food available should things get bad. 😂 Also worth mentioning is quite a few people in the Florida Panhandle eat fried mullet roe when in season so perhaps that's more your thing? 😅

    Try Striped Mullet instead of the little Grey Mullet. The different species of mullet are all pretty different, taste-wise. Those big 18" Striped Mullet are the ones they eat in FL, totally different species from the little Grey Mullet that are so common as bait. I ate Striped Mullet once and was shocked at the flavor- it tastes like green peas. No joke, Striped Mullet taste like vegetables. The texture was amazing, flavor was meh - but impressively vegetal. I just fried mine in butter to do a taste test, and I can see how they'd taste great smoked a-la Florida style. Try the Striped Mullet if y'all have them in TX.

    They are good better if you bleed them. We used to eat them all the time cause I had an old school grandpa that fished for meat back then. Then one day he tried hard heads after a man ask him what he was going to do with the big ones he caught. He said they will stay there and that other guy took the big hard heads with him. My grandpa looked and said next big one you catch put it in the cooler. I was like huh. It wasn’t bad but we fried all of our fish back in the day.
