In this video, I take you behind the scenes to learn how to make a super popular Arab pastry filled with cream, with the most popular middle eastern bakery chef in Silicon Valley! Sometimes the translation of Arabic words to English doesn't work out so well. Take the popular dessert called Warbat, pronounced "warr-bot." Most people might envision a warrior bat, angry and ready to fight. In reality, warbat refers to a delicate custard filled pastry, soaked in fragrant lemon and rose syrup then sprinkled with pistachios or walnuts. You will see how surprisingly easy it is to make!

For ashta (cream) filling:
:
1 Gallon heavy cream
1 Gallon milk
3/4 cup cornstarch
Dash salt
1 Tbsp sugar
Whisk the ingredients in a saucepan first, then put over medium heat and whisk for 10 minutes or until thick. Store in a bowl, and cover. Refrigerate overnight.
18 Sheets phyllo dough
1 cup melted ghee
Cut the phyllo sheets into 12 even squares, using a ruler to make things even. Using an ice cream scooper, put an ice cream sized scoop of the ashta into each square. Fold over like a turnover, pressing down on the edges to seal. Arrange the 4 of the turnovers 4 to make a large square. Repeat with the rest of the turnovers to make two more large squares. Pour melted ghee evenly over each one, then bake in the oven at 400 degrees for 25 minutes.
Sugar (Attar):
1 Cup sugar
1 Cup water
1 Tbsp lemon juice
1 Tbsp orange blossom water
Put the sugar and water into a saucepan, on high heat until boiling. Lower the heat to a simmer for about 15 minutes, stirring occasionally until syrupy, you want the syrup to coat the spoon when it’s done. Add the lemon juice and orange blossom water and let cool before pouring over warbat pastry. After baking, pour the cooled syrup over the hot pastry, top with optional ground pistachios and serve immediately.

    I first encountered these less than a year ago, here in Kansas. A new cafe with mid Eastern food has them. I have to be careful not to go every day, they are so good.

    Everything looks just delicious! Akkawi cheese. properly desalted. is THE cheese for Knafeh bil Jibn. It's the only one that doesn't collapse when heated. It keeps its chewiness, stringiness and texture under high heat.

    really she ships what is the name of the bakeries appears to be 2 the oasis and something else because on the oasis website there was mainly baklava which i can take or leave but i love the other stuff she had i wonder if she makes atayef

    I knew something was wrong when Maya was pouring her milk mixture! I’m thinking NOWAY THAT IS 2 GALLONS! However, I followed the recipe, started with 1 gallon milk and 1 gallon cream, it filled my biggest pot to the rim! I back tracked by dumping half the mixture back into the 1 gallon milk container and proceeded with HALF the recipe. I put the cream in the fridge overnight and this morning it’s still a little loose. This didn’t turn out as I hoped and I’ve wasted all this milk.

    Add 2 more tbsp cornstarch to a little milk, then add it to the rest in the saucepan. Keep stirring over low simmer until thick. It will get thicker as you keep it in the refrigerator overnight

    So I made it and the liquid is a lot for a home cook. I cut it and did one fourth of the recipe. Liquid came out to 4 cups each of the milks. (8 total) cornstarch came out to three tbsp. So I ended up adding 7-8 tbps bcz the 3 didn’t thicken it at all. Mine ended up tasting like custard (think donut filling) But came out delish. Thanks for the recipe. Just wanted to let you know that more starch was needed if you cut the recipe. Family def enjoyed
