    I love the tradition behind Turkish and Arabic coffee. This has style!!! We Americans are too quick to enjoy the social aspect of making and drinking coffee. I wish I had enough time to enjoy coffee the Middle East way.

    When I was in Turkey last year Starbucks serve Turkish coffee and they use only the veranda blend and it taste great , and i use it here very good

    I bought a cezve last year because I wanted to try making Turkish coffee. I watched a million videos on how to make it and botched the first few batches. But now it’s all I drink. Blanche, your video is the first one I’ve seen that says to boil it. Every video says not to boil. I guess it’s preference? Mine holds 6oz and I use 2 even tablespoons and 1/2 tsp sugar. I will definitely try adding the cardamom soon. Thanks for the video. Was interesting seeing how you guys make it.

    Yes for some reason, my mom has always boiled it at first, then watched it simmer for about 20 minutes. Your measurements sound great, so glad you are enjoying this type of coffee!

    Same, I bring mine to foam, pull from heat, back to heat to foam again, remove and pour. Always with cardomom!!!

    Oh my gosh this couldn’t have come at more perfect timing. I have not been able to drink coffee for months! I have just been able to return to my beloved coffee. I’m going to tell you I do hardly nothing. I do not do drugs I do not smoke I do not drink. I drink fruit juices water and my beloved 1 to 2 cups of coffee a day. Normally 1 . I am so happy I can drink coffee again. I can’t even tell you!

    Baba’s debut!!! So nice to see you with your parents. I drink both coffee and tea and I love cardamom in both. There is something to be said of both traditional and new way of making coffee. On a lazy day to relax and enjoy the little things, the traditional way of making coffee is great. But if you are entertaining a large number of people or if you’re on the run, instant brewing is always a welcome relief. I wonder how many viewers stuck around for the blooper at the end lol thanks for sharing again Blanche!

    aw watching this warmed my heart❤...my favourite times have been with the ladies, my mom, aunts, cousins and my sister who always made it overflow lol...i love how my mom taught us how to make it and the importance of the shafron(the foam) to be done right to serve...haha, it always reflected well on her when the guests were impressed by our coffee skill...thank u for sharing this, it made my day😊

    Beautiful family show! Arabic coffee is the best! I always enjoy watching your videos. They are uniquely interesting and fun. I am sure the machine-brewed Arabic coffee must be good, too. Sometimes you need a shortcut. However, this time, I have to comment on this video. To brew Traditional Arabic coffee you need a Brik with a much narrower neck. This is how you get a thick layer of Ashta or Raghweh. Briks come in different sizes. The number of the small traditional cups is stamped on the bottom of the Brik. Two cups brewed in an eight-cup Brik will produce almost no foam. You start with a very low fire. The idea is to prolong as much as possible the brewing process without getting to the boiling point. This is what your endearing Baba meant when he said that Traditional Arabic coffee is brewed on charcoal "for days". This very slow method leads to a nice, compact Ashta. Ashta must be kept intact at all times, and finally distributed equally into a number of cups. To that effect, once the coffee is about to slowly boil over, you remove it from the fire, give it a stir, then back on the low fire, and quickly remove it BEFORE IT BOILS AGAIN. (If you allow it to boil even for 2 minutes you kill the Ashta - let alone 25 minutes). Then the coffee must rest for two minutes to allow the grounds to settle. For distributing the Ashta, you first carefully pour a small amount of coffee into each cup. It will be all Ashta.Then you complete the pouring. The recommended coffee grind is the finest possible. It is called #1 Turkish. If you use a coarser one, even the Fine Espresso #2, the grounds will keep floating inside your coffee cup. The sugar is added to taste at the beginning of the brewing process. Traditional Arabic coffee has - believe it or not - six levels of sweetness (!): Murrah (bitter, or black); "Al'Rihah (with the aroma of sugar); Sukkar Kalil (a little sugar) Sukkar Wassat (medium sugar); Mazbutah (correct sweetness); Sukkar Ziadeh (extra sugar). I would love to hear your Baba's thoughts about my comments. Be well!

    Blanche you are amazing. God bless you and your family. I am Italian but through marriage have come to love Middle Eastern culture and especially food. I often (try) to make all the delicious dishes; mansef (my favourite), mlukkhie, cousa, grape leaves, malfouf, Maftool, magluba, emsahan, and mamoul cookies. I also make italian dishes of course.     This coffee brought back so many fond memories of share coffee Arabic with my late beautiful cousin. So many evenings we shared drinking it , and always she would tell my fortune. I can still smell it brewing on her stove ..miss her so much . She was from Lebanon and taught me so many traditions.

    One more comment please. You’re such a lovely woman. Please look at your Mother, another lovely beautiful woman. You’re going to age gracefully. You are a lucky woman. Is it a combination of your Father and Mother??? I hope so. I married a beautiful Phillipino girl and we have this most unusual mix of my wife’s daintiness and the ruggedness you would expect from a male child. My son is so handsome and beautiful I must tell everyone. Even at his 4 years of age. I’m struck by the similarities of your Mother’s beauty and your own. That’s what got me to thinking of genetics. I love your channel and have tried several of your recipes with good success. I love that your recipes usually include a good amount of cumin. A highly underrated spice and so middle eastern tasting. I usually associate cumin with Mexican flavors, but I forget my history and remember that Spain shaped much of the culture of Mexico. Long story short.     Just a suggestion - would it help when making the traditional method to use a 4 cup decanter to brew the coffee versus the 2 cup? so there is time for you to see the coffee water rising and you can switch off the gas in time? does the coffee pot have to be exactly the same size as the water measurement? I leave room at the top when making tea / coffee so the liquids don't boil over and I have time to react......

    My dad used to make this , and had the little pot to boil it in . It was very strong and sweet, and he drank it always with a glass of water on the side . He was from Cyprus. He called it Greek coffee, but of course it’s Arabic .!

    Been trying different tactics on making Arabic coffee to achieve a lot of foam. Grandmother’s advice; after boiling the coffee (after the overflow phase had passed) you can take the wet stir spoon to dip into the dry coffee to grab up some more grinds and back again into the hot coffee briefly, then taking it off the heat. It does add some foam but not getting the thick foam I see some able to make... there is an art to it so it must be me doing something off 😆. Anyways I love your family, your mother reminds me of mine when she reads my fortune all in good fun. I don’t know how they see images emerge from the residue 😂

    You know, I use a modern day gadget to achieve the foam, basically I cheat because I get so impatient lol. I put the coffee in a larger cup, then use this foaming gadget: amzn.to/2UJnAnu And then I pour it into smaller cups. I agree I have no idea where they come up with these images in the cup--wild imagination haha!

    Love your show! My sito was from Syria and the bread she made was not a thin, pita like bread but rather large, round loaves 8" to 10" and 2 to 3 inches thick. Very similar to Holy Bread that is used in the Antiochian Orthodox Church. She only used flour, water, yeast and salt and baked the loaves directly on the oven racks. The bread never fell through the racks nor stuck to the racks. Would you or your mother know the type of bread I am talking about and what it is called in Arabic? I would love to learn how to make it. It would be wonderful if you could make it on one of your shows. Keep making us Arab Americans proud!!! Thank you.

    You bring up a great point. Excess sugar that cannot be broken down and absorbed by the body will be left to sit in the bowels, where it ferments. This sugar moves more slowly through the large intestine, feeding bad bacteria and yeast, and causing a build-up of cramping, bloating or gas. Drinking the coffee without sugar can let this digestion process begin without any interference ;)

    @@blanchetv of course ibrik has been transferred from Arabic to Turkish language :) I don't know the roots of the word cezve though, most probably it's again from another language.
