    Me? I never had a problem with pickled beetroot; it's how it was when my Grandad introduced me to it (with chips).

    Beetroot, boiled to a softness that melts in the mouth is a gorgeous vegetable - food of the Gods I say. It's the evocatively earthy taste combined with the sweetness along with the intense, purple colour that makes it so wonderfully unique. One of my favourite vegetables.

    I do love pickled beets - done well they are not overly acidic. BUT I love beets fresh as well, looking forward to more of these. :-)

    I love beetroot! Amazing in salads with yogurt dressings, and it's packed with folic acid. Thanks for the great recipes guys.

    Absolutely. The jarred beetroot - the natural beetroot flavour is lost under than heavily concentrated vinegar liquor. So you're basically eating vinegar and 1% beetroot, rather than more of the other way around. Try taking a shot of pure vinegar, that's basically what it is. But the beetroot in it's natural pure form, is so interesting. It can be so savoury, but it can be so sweet as well - it's really interesting on how it plays on the mind's perception of it. A very versatile root veg indeed.

    I've become a sucker for whole roasted beetroot, then peeled when cooled and pan fried in a sweet and sour+some heat coating (I won't say sauce because it only coats the outside of the veg.). I fry the beetroot with pre cooked carrot and it becomes gorgeous. Really simple and delicious. Wash beetroot, throw in oven, peel, cut and pan fry. I don't know what it is but I don't enjoy cold beetroot as much as I do warm.

    I love pickled beets to be honest, but it wasn't my first experience with them. Here in the US it's bland canned beetroot that is most people's first experience with it. Luckily I was able to get over it.

    chef mike I put down a plastic cutting board first. One that can go through the dishwasher. Makes the cleanup much easier.

    That is true story. I also don't like it pickled. What I do is wash the juice of and they also bleed less in sandwiches. As such. Washed from the vinegar.
