Pear and Chocolate Cobbler | Hugh Fearnley-Whittingstall

The natural sweetness of pears balances beautifully with bittersweet dark chocolate and a crusty, cobblery topping in this baked pud. It’s luxurious without being heavy. This scrummy recipe is taken from Hugh's new book, River Cottage Light & Easy, published by Bloomsbury.

INGREDIENTS (serves 6):
4 large or 5 ripe, medium pears (about 800g in total)
100ml apple or pear juice
1 tablespoon runny honey
50g dark chocolate (at least 70% cocoa solids)
For the topping:
100g ground almonds
50g brown rice flour
2 teaspoons baking powder
50g light soft brown sugar
2 large eggs
1 tablespoon rapeseed oil
DIRECTIONS:
Preheat the oven to 180°C/Gas 4. Have ready an oven dish, about 1.5 litre capacity.
Peel the pears, quarter them and remove their cores. Cut each quarter into 3 or 4 slices, dropping them into the oven dish as you work.
Spread them into a roughly equal layer. Trickle the apple or pear juice all over the pears, followed by the honey.
Finally break the chocolate into small pieces and distribute evenly over the fruit.
Sift the ground almonds, rice flour, baking powder and sugar into a bowl (or mix thoroughly with a whisk to disperse any little lumps). Add the eggs and rapeseed oil and beat together thoroughly until you have a thick batter.
Drop the batter in 6 large dollops around the edge of the dish, partially covering the pears.
Bake for 35-40 minutes or until the cobbler topping is firm and golden brown. You can poke a skewer into the topping to make sure it’s cooked through - it should come out clean.
Leave the cobbler to settle for 10 minutes or so, then serve. (You may find the chocolate has gone a bit grainy where it’s mixed with the hot pear juices, but this will in no way detract from the all-round deliciousness of the pud!)

I love how versatile this recipe is! I'm always looking for new ways to use the rice flour in my pantry (I've only really used it for Japanese based sweets but this is new for me) and ground almonds pairs so well with pears! :) Question: if I wanted to spike this dessert, do you think a little bit of rum in place place of the apple juice would be too rich?

The rice flower prolly makes the toping harder when it's cooked,compared to the wheat flower

I should try with another fruit. Pears are scarce here just imported pears are available which is not taste much. Any suggestions guyz?

Chocolate does not have to contain any dairy, he said it was 70% dark chocolate, and usually they just consists of cocoa butter and.. well cocoa :)
you call it cobbler, cobbler ' luxurious' with dumplins infused and crust on top

Marc K. Maybe the positive comments outweigh the negative? I didn't even notice the lens flares before reading the comments. Also, I'm quite sure these book videos were all shot and edited some time ago, so complaining on every video isn't going to accomplish anything.

The focus is fine. It's just a little bit close up and shaky, a bit like in an action film. Slightly incongruous and actually quite humorous as well imo.
Hate to inform you but eggs are technically dairy.
