Banana Flavored Soft Rice Cake Roll - Mochi Roll - 软香蕉糕

Banana flavored soft rice cake rolls are one of the oldest of all snack recipes. They are made with everyday ingredients, and infused with a sweet banana essence.
1 & 1/4 cup (187.5 g) glutinous rice flour
1/4 cup (4 tbsp) (37.5 g) rice flour
3/4 cup (150 g) sugar
3/4 cup (177.5 ml) water
2 tsp banana extract
1/4 tsp salt
Red food coloring (optional)
1/4 cup (4 tbsp) (37.5 g) glutinous or rice flour (either works) - for dusting
Mix all ingredients in a mixing bowl until well combined.
Thinly apply oil to a shallow pan (pan can be round or square).
Place pan in a steamer.
Pour batter into the pan.
Cover and steam on medium heat for 15 minutes.
Remove from heat and cool for 10 minutes.
Toast 4 tablespoons of rice flour between low to medium heat for 3 to 4 minutes.
Sprinkle some toasted flour on the working surface.
Roll cake into a rectangular shape about 1/3” (1 cm) thick.
Brush topside of rice cake with red food coloring.
Hand roll the rectangular cake into a log.
Slice the cake roll into 1” (2.5 cm) thick pieces.
If needed, sprinkle more toasted flour on rice cake roll to prevent sticking.
