Baked Ham - Baked ham with a pineapple brown sugar glaze

Recipe:
Glaze-
1 cup pine apple juice
3 tbs brown sugar
3 stalks rosemary
1 7.5 lb ham
To garish:
Pineapple rings
Toothpicks
Preheat oven to 350 degrees. Combine glaze ingredients in a pan and bring to a simmer, cook until sugar is dissolved. Score the ham 1/4” deep going up and across every half inch creating squares or diamonds. Pour 1/2” of water into bottom of roasting pan. Place ham on roasting rack and brush with glaze. Place pineapple around the ham securing them with a toothpick. Insert an oven thermometer that is set to 120 degrees and cover with tinfoil. Place in oven and bake until 120 degrees is reached (about 2 1/2 hours). Remove tinfoil brush again with the glaze and place back in oven until ham reaches 150 degrees (about 1 hour). Pour the rest of the glaze over and turn oven to broil for 2 to 3 minutes or until desired brownness is achieved. Rest 15 minutes before carving.
