Why can they never just shut the hell up and get to the point? Especially when you already know by looking that they screwed the description up, left ingredients out, and you literally have to listen to 30-60 seconds of nonsense BS talking. Irritating AF

Great recipe, Rocco. Looks easy enough for neophyte Mexican cooks. Few ingredients, no fancy kitchenware required. I know it complicates the dish but what about browning the meat? I use a separate cast iron to brown the meat and add flavor. It is easier to clean than an enameled Dutch oven. See your Dutch oven. It looks like you need Bar Keepers Friend and a vat full of Elbow grease. I always wondered about getting a black enameled Dutch Oven to hide the stain? Thanks for the recipe , Rocco.

Thank you! I do brown meat before braising for some things just came up with this after reading and watching a lot of other birria recipes. And I’ll try out that bar keepers friend!
@tompagano90159 күн бұрын
@@roccoskitchen8302 . Thanks for replying. You may need more than Bar Keepers. There are some videos on cleaning Dutch Ovens beyond the Bar Keeper. The number one cause of disaster Dutch Ovens is burning food in a Dutch. The best treatment is prevention- don’t leave your “ baby “ unattended , like a real baby left in your car. Or at least that was what my Mom told me.

Looks amazing. A few things that would improve it are: Get bone in short rib as the marrow will be give a richer sauce. Brown the vegetables a bit more for more flavour. After adding the wine, let it cook off until it's almost a syrup. Season at the end as it will thicken over the cooking period and if it's just right at the beginning, I will likely be too salty at the end. Annoyingness ensues as you have to add more liquid and then thicken it with some sort of flour. As opposed to just adding salt if it's not salty enough. I will assume that he separated the braised liquid as it will have far too much fat in it for the sauce.
