Bailey's Last Call: Original Christmas Cocktail | Cocktail Fridays

This holiday we create an original cocktail as a tribute to one of the ultimate holiday films: It's a Wonderful Life. Combining gingerbread bitters, spiced rum, and mollases blackstrap rum, we serve up a cocktail that hopefully George Bailey himself would be happy to order at Martini's in Bedford Falls.
Bailey's Last Call by David & Jess Badgerow
1¼ oz Blackstrap rum
¾ oz Spiced rum
1 oz Cold brew coffee
¼ oz Simple syrup
7 drops Gingerbread bitters
Stir down with ice for 15 seconds
Strain into chilled brandy snifter, serve up

    Tim! Thanks for the kind words! If you don't have gingerbread bitters on hand, you could always try a gingerbread cold brew, potentially.. but who knows, you might have the elusive bitters! Either way I hope you enjoy!! Cheers!

    As always, the intro almost, ALMOST, outshines the cocktail, but my oh my this definitely sounds like it would enhance my holiday spirit

    Thanks so much, Matt. This was a fascinating one to try to come up with! Since gingerbread bitters can be hard to find, I've also been recommending gingerbread-infused coffee as well, like a gingerbread cold brew, I imagine it has a very similar end result. Cheers, buddy!

    Oh man, that intro!! 😂 This sounds like a yummy stirred holiday cocktail. I can’t see how it can go wrong. I don’t have gingerbread bitters but I bet I could use gingerbread coffee cold brew (I think Trader Joe’s has it right now) to really amp up the flavor. Happy Holiday, my friend. Cheers!

    Oh man I have missed your videos. Glad to have one before the holidays. Always love your intros. I need to find this gingerbread bitters. This is pretty much an amazing original riff on an old fashioned, spirits, simple syrup and bitters. So works for me. Now just to find the bitters. cheers and happy holidays

    Doc! Very true, it's like a mollasses-rum old fashioned more or less! I've seen some folks try gingerbread coffee as a good subsitute for doing the bitters, or also gingerbread infused simple syrup. Both work fairly well.     I ran out exactly at the time your video would air... Looked at my phone a few minutes later and saw you had a video... Saw Baileys and was like, Irish Cream tiki? Hmm... Then, when I watched, I was like, oh... George... I'm like Stephane, I need gingerbread bitters... I don't know if I'm making this this weekend... But it will be made...

    Indeed, when we came up with the name for this, I think we were trying to do a double entendre of like.. George-Bailey-Coffee, but indeed it mis-leads a bit, to think it's going to be cream. But, I hope folks still enjoy it! When we first started designing this cocktail, we originally had done a rum-infusion with cloves and cinnamon, and it failed miserably, so we thought we would "simplify" it by using gingerbread bitters.. but, those can be hard to find, and even harder to make, so maybe we didn't simplify it as much as we hoped 😆 Anyhow, hopefully folks will still get a good cocktail out of it with a sub like Ango or Walnut bitters in its place, not quite gingerbread, but maybe something similar! Or, just toss an entire gingerbread cookie into the cocktail at the end and maybe it'll work, too! 😆

    NOOOOOOOOO I don;t have gingerbread bitters... But I think I can tweak this since I have gingerbread syrup and other bitters. Great video as always!!! Merry Christmas to one and to all!!!

    Oh yeah!! Maybe you could even swap the Simple entirely for Gingerbread Syrup, I think that'll basically wind up in the same place, as far as flavor and aromatics! Thanks for watching as always, Stephane!

    First, that intro was great! Did you film it or add your heads/faces to an old movie? Second, being in Canada, no gingerbread bitters. What can i use as a sub?

    Thanks, Robert! We filmed it locally at an old bridge. Was a fun shoot! I suppose in a pinch you could do something like 2 dashes of angostura bitters and then sub the simple syrup for a cinnamon syrup or a dark demerara syrup, that might help maintain that dark sugar sweetness of the "cookie" flavor. Cheers!!
