NECESSARY PRODUCTS:
Eggplants - 3 pcs. (baked, peeled and drained).
Garlic - 2 cloves.
Sesame tahan - 2 tbsp.
Half a lemon.
Salt.
Cumin.
Parsley (finely chopped).
Olive oil.
METHOD OF PREPARATION:
Finely chop the baked eggplant and place it in a large bowl (a large mortar works best). Finely chop the two cloves of garlic and add them to the bowl with the eggplant. Add the juice of half a lemon, finely chopped parsley and the sesame tahini. Season with salt, cumin and olive oil. Stir with a wire whisk to mix everything very well.
