Bánh patê sô was one of my absolute favorite childhood treats. They are the perfect size for a quick snack or party food! They were always a must have when we went to a bakery after school.
Lesser known than bánh mì, bánh patê sô is another perfect example of how Vietnamese people took something French and made it our own. While the history of colonialism is dark, these mini meat pies encased in flaky golden pâte feuilletée, like many other fusion dishes, represent the creativity, resilience, and adaptability of a people who have been through much hardship.

Hello French speakers here. "Pâté" doesn't means "Pastry" in English, but only "Ground Meat Stuffing".

French speakers here too ☺️ According to our research, « pâté chaud » was used to mean « tarte chaude » in Indochine French. Nowadays, the language has changed and pâté only means the meat dish we have come to know.
Yum!! I'm not viet but it tastes like my childhood too! We would buy supplies in houston 1-2x a year and I always bought out the bakery each time. I don't remember jicama in it-- maybe I thought it was water chestnut??

Some people just use white onions, but I’ve never seen water chestnut used- at least in VN. It’s not commonly used there, but definitely wouldn’t be a bad substitute for jicama!
