我很喜欢吃娘惹糕,尤其是有糯米的糕点。但是我胃不好,吃后常会出现消化不良的情况。于是我们就研究一款用日本米取代糯米的食谱可以减轻胃部消化系统的娘惹糕点 - 香兰糯米糕 Kuih Seri Muka / Kuih Salat。
✅用日本米来制作底层
我们用来制作底层的部分是日本米粒。它虽然偏短但口感偏油糯,黏性也很好用来取代糯米制作糕点是很好的选择。如果你喜欢吃糯米可以参考我们之前的 Pulut Taitai 和 Pulut Inti,个别用了2种不同的方式制作的糯米糕层。

关键就在粉那边的比例了,我有自己尝试了几个版本。木薯粉比较多的话吃起来就很Q,而面粉比较多的话口感就比较软。沾着椰丝来吃很像Kuih Kosui呢!除了无蛋版之外,像这款娘惹糕有椰浆不适合做多来收藏,而且吃多了也会腻。如果家里成员没那么多的话可以像这样做1粒蛋的版本放进小碗里哦。

- 香蕉叶

- 50克 木薯粉
- 30克 中筋面粉
- 100克 香兰汁
(用40克香兰叶加120克清水打成汁)
- 100克 细砂糖
- 200克 浓椰浆
- 0.5茶匙 盐
- 3粒 鸡蛋 (3粒蛋液大约150克)
💚上层(纯素)
- 40克 木薯粉
- 110克 中筋面粉
- 120克 香兰汁
(用50克香兰叶加140克清水打成汁)
- 120克 细砂糖
- 250克 浓椰浆
- 0.5茶匙 盐

I love eating Nyonya Kuih, especially those with glutinous rice. But I have an upset stomach and often have indigestion after eating. So we researched a Nyonya Kuih that uses Japanese rice instead of glutinous rice to relieve the digestive system of the stomach - Glutinous Rice With Pandan Custard (Kuih Seri Muka / Kuih Salat).
✅Rice
The part we use to make the bottom layer is Japanese rice. It is a good choice to replace glutinous rice to make Nyonya Kuih. If you like to eat glutinous rice, you can refer to our previous Pulut Taitai and Pulut Inti, which use 2 different ways to make the glutinous rice Kuih.

✅Eggless Custard Layer
The key is the ratio of the flour. I have tried several versions. If there is more tapioca flour, it will taste very chewy, and if there is more all-purpose flour, the mouthfeels will be softer. It looks like Kuih Kosui when eaten with shredded coconut! In addition to the egg-free version, this Nyonya Kuih with coconut milk is not suitable for storage for many days. If there are not many members in the family, you can make an egg version in a small bowl.

(Use 40 grams of pandan leaves and 120 grams of water to make juice)
- 100g Caster Sugar
- 200g Thick Coconut Milk
- 0.5 tsp Salt
- 3 Eggs (about 150g egg liquid)
💚Upper Layer (vegan)
- 40g Tapioca Flour
- 110g All Purpose Flour
- 120g Pandan Juice
(Use 50 grams of pandan leaves and 140 grams of water to make juice)

- 250g Thick Coconut Milk

    Thank you By accident came across your video I like the idea of using Japanese Rice (no soaking) and going to try it. When my parents were alive, we used to visit Malaysia and enjoyed the kuih but now we tried to make our own I laughed when you compared the kuih to cheese cake, no comparison Kuihs are much better than that!! I have been living in Europe since 1970, and travelled widely, but still misses Malaysian foods (the best) So thank you. Easy to understand your mandarin too Keep up the good work.     Hi, if glutinous rice ok for you then you can stick to the glutinous rice. I think glutinous rice is cheaper a bit.

    如果你要软口感的话,建议最少泡水6个小时。没泡水的做法吃起来都比较有口感,不同做法根据不同需求而已。

    我视频里用的是盒装的,用新鲜的也是份量一样的,主要是看椰浆的浓度。如果椰浆稀的话用来煮饭的椰浆就不用再加水了。

    Ingredients Bottom Layer - 300g Japanese Rice - 150g Thick Coconut Milk - 150g Water - 30 Butterfly Pea Flowers - 0.5 tsp Salt - 1 Pandan Leaf - Banana Leaf Upper Layer - 50g Tapioca Flour - 30g All Purpose Flour - 100g Pandan Juice (Use 40 grams of pandan leaves and 120 grams of water to make juice) - 100g Caster Sugar - 200g Thick Coconut Milk - 0.5 tsp Salt - 3 Eggs (about 150g egg liquid) Upper Layer (vegan) - 40g Tapioca Flour - 110g All Purpose Flour - 120g Pandan Juice (Use 50 grams of pandan leaves and 140 grams of water to make juice) - 120g Caster Sugar - 250g Thick Coconut Milk - 0.5 tsp Salt 🧑‍🍳 INSTRUCTIONS 1. Wash the Japanese rice and put it on a plate. Mix the thick coconut milk, water and salt evenly, then pour it into the rice and stir well with chopsticks. 2. Put the blue pea flowers into the rice in different places, and put the pandan leaves on top. 3. Then steaming on high heat for 20 minutes, remove the pandan leaves and stir the blue rice with chopsticks to spread out the color. 4. Put the banana leaf at the bottom of the movable mold, press the steamed rice firmly, and then put it in the pot to keep warm. 5. Blend pandan leaves with water into a juice with a food processor, filter out the fibers with a cloth and extract the juice. 6. Put all-purpose flour, tapioca flour, thick coconut milk, salt, caster sugar and pandan juice into a measuring cup, stir well and strain into a pot. 7. Cook on low heat until it is a little sticky, then filter it again and pour it into the blue rice. 8. Turn on high heat. After the water is boiling then turn to medium heat and steam for 30 minutes. Leave a seam of the lid can reduce steam dripping onto the Kuih. 9. After steaming, let it cool before demolding, then use an oiled plastic knife to cut into the size you like and enjoy.

    有几个可能, 一,蒸的温度太高 二,你的锅子不适合用这个方式,太多蒸汽滴进糕点里了。可以用锡纸戳小洞盖在上面。

    嗯嗯,好多人也有这问题。可以搭配姜茶或者淡淡的茶水或黑咖啡一起吃能解腻,我这样吃就不会胃胀哦。
