@@bs27v1b exactly. Being loved and loving others, is all that we ultimately want. Jack represents that part of us that is fearful of love. This movie scene shows that its worth the effort to find True Love. Their differences are exactly what brought them together from the start and through that evolution to the point he can say those beautiful words: You are perfect.

While most of the paintings used throughout the film are actually owned by Jack Nicholson himself, the painting I believe you are asking about (in background at kzread.info/dash/bejne/iYtlkqmDaKy9m9I.html ) does not seem to be one of them. Given the narrative of Simon's upbringing, it was most likely created explicitly for the movie. Much of the bespoke art is attributed to Billy Sullivan (see www.allmovie.com/movie/as-good-as-it-gets-v158803), though this is not without its caveats - the bedroom sketches of Grace look very much like Sullivan's work, though the painting in question doesn't strike me as being his.
