Amazingly Delicious Vanilla Hot Butter Cake | Food Processor Cake | Pound Cake Recipe

This amazingly delicious vanilla hot butter cake was made in the food processor. It has the perfect crumb and is made with very hot melted butter, caster sugar and cake flour. If you don't have a food processor you can still make this amazingly delicious vanilla hot butter cake with a mixer, but the texture may be slightly different.

Food Processor Vanilla Hot Butter Cake Ingredients:
1 1/4 Caster Sugar (directions below)
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract
4 large eggs room temperature
16 tablespoons (2 sticks) unsalted butter, melted and very hot
1 1/2 cups cake flour (directions below)
ENJOY!
To make cake flour:
Using All Purpose Flour, for every one cup of flour, first remove 2 tablespoon of the flour from the one cup and add 2 tablespoons of cornstarch. So for this recipe you would remove 5 tablespoons of flour from the 1 1/2 cups of flour and add in 5 tablespoons of cornstarch. Then sift the cake flour twice.
To Make Caster Sugar:
Caster sugar is a very fine sugar mostly used other countries. It can be hard to find in local grocery stores in the United States. You can buy it online in places like Amazon, but you will find that it can be quite pricy averaging around $13 for 2.5 pounds. To make your own Caster sugar simply grind regular sugar in a food processor, blender or coffee grinder until it reaches a finely ground, but not powdery consistency.

    My Mother used to make what she called "a true pound cake", because she used 1 lb of flour, 1 lb of eggs, 1 lb of sugar and 1 lb of butter. Also, 1 tablespoon of real vanilla extract. It was fabulous and always a big hit at family gatherings. She never gave out the recipe because she wanted to make something so good, that no one else could replicate it.

    Just voted for you as favorite chef 2023. ❤ Pam I am shopping for a food processor that will work in place of my hand mixer, and blender and even mix bread dough. My sister is a former caterer and has been helping me look but there’s so many different manufacturers and so many gadgets. Do you have any recommendations or suggestions on what would work best? My kitchen is small and a stand mixer just doesn’t fit. Thanks in advance ❤

    I've found that Weis grocery brand sugar is extra fine quality,much finer ground then Domino or other brands I've bought...I'm not sure how many states have a Weis store but if you can get it I hope you try it .Much cheaper then castor sugar surely..

    I have a question, I’m not much of a baker and I would love to know why we don’t want to overmix the batter? Don’t we in theory want it to be clump-free and smooth?

    You always want to mix your dry ingredients into your wet ingredients just until incorporated. They will smooth out as they cook. If you over mix them your cake can turn out dry and dense. Thanks

    Hi Barbra! Not much. At the end of the day it is a pound cake and so is a Kentucky butter cake, a buttermilk cake, a sour cream cake so forth and so on. They are all pound cakes but given their name based on an ingredient used. In this case hot melted butter and vanilla gives it its name. Thanks so much for your support!
