KADINBUDU
Servings: 4-6
Difficulty: Easy
Prep time: 15-20 minutes
Cooking time: 8 minutes
For the meatballs;
300 g minced meat/ ground beef- 300 gr mushrooms + ¾ cup green lentil if making vegetarian version.
1 onion, chopped
130 g rice, ¾ cup or 2+1/4 cups leftover pilav
1 egg
2 cloves, crushed
2 teaspoon allspice
½ teaspoon cinnamon powder
½ teaspoon köfte spice mix, etsy.me/3ph4Y0M
½ teaspoon salt
½ teaspoon black pepper
15 sprigs parsley, chopped
10 sprigs dill, chopped
For coating;
1 cup flour
2 eggs
Sunflower oil for frying
Rocket, for serving
• Place the rice in a saucepan, add water up to 3 fingers higher than the level of the rice. Boil the rice until cooked and drain. You can use leftover pilav as well.
• Take the half of minced meat in a pan and cook on high heat. Add in the onion when the meat changes colour. Cook them together on medium-low heat until all of the onion changes colour and disappear. Season with salt and black pepper to taste.
• Put the other half of raw meat in a bowl, add the egg, allspice, cloves, cinnamon, köfte spice mix, salt, black pepper, parsley, dill and knead until mixed. If you don’t have köfte spice mix. Add oregano or thyme, cayenne pepper and cumin total half a teaspoon.
• Add cooked ground beef and onion mixture and rice when they are cooled to room temperature.
• Put the flour and eggs in separate plates. Beat the eggs and add a pinch of salt to each plate.
• Pour oil in a large frying pan deep enough to cover the meatballs. Shape the mixture into 12-15 ellipses.
• Once oil is hot enough to fry, first cover the meatballs with flour. Shake the excess flour then cover with egg.
• Fry them until golden brown. You can serve the delicious kadınbudu with rocket leaves. You can eat kadınbudu hot or cold.
• To make the vegetarian version, boil the green lentils around 12 minutes until cooked but not mushy. Treat the mushroom like meat. Fry the half with onion and use the other half raw as explained above. We named this Baharbudu because this version is made for Bahar Kitapcı since she loves kadınbudu but can’t eat anymore because she is vegetarian.

HI Refika. In Poland we have some similar recipe called "Oszukane gołąbki" (Fake Stuffed Cabbage in English). This recipe also has meat, onion, spicies and rice, but we add chopped cabbage to meatballs, and baked or cooked in tomato sauce (often with sour cream). It's very delicious, I think you should try this :)

that sound tasty too. We love our cabbage as well, we have "lahana sarması". if you are familiar with stuffed grapge leaves this would be stuffed cabbage leaves and it's much easier to cook

refika the rice water can be used as an oral rehydration solution...just add some lime/lemon juice(ie potassium) and some salt (sodium)...rice water was used during the famines in 1943/44 in india,,,,lastly it can be used for making rice paper to wrap spring rolls ! it tastes great with some butter added ...a gruel soup

Thank you for yet another great recipe, well really two recipes! I will have to make this sometime for one of the picnics I have in summer with my nieces. And I think it would be great to share at my church's monthly lunch after the service. I made dolma for it before and everyone loved them, and a couple of other things you have introduced me to. Thank you too for always reminding me to try to minimise waste by considering using the cooking water from the rice! I have to admit I've always poured it down the sink in the past, though I use my rice cooker more often these days. You know, even on days I dont follow one of your recipes I do still benefit from your lessons in how to use some herbs and spices in ways I wasn't used to or in methods of preparing the ingredients. A suggestion: it's great to see videos on how to make the food that foreigners may know. Like köfte, hummus etc. But I think it would also be great if you could do a regular Home Cooking slot. People know about kebab. And kebab. And meze etc but what about recipes a Turkish mom would make. You could use seasonal vegetables. For example Kapuska in the winter, or Patates Yemeği with Kıyma. Then in the spring, how about Bezelye Yemeği... Then Taze Fasulye Etc etc. Everyone is looking for ways to up their vegetable intake. Also kuru fasulye. The list is endless. Simple but delicious.

*The Rice water is good for our hair* - it makes it soft and removes some frizz.
The boiled rice water if you use unpolished rice, we call that "am" in our part of the Philippines. We use that as a milk substitute for babies who are lactose intolerant or for thise whose mothers cannot produce enough milk.

Do you have "Impossible Meat" in grocery stores? I think Bahar would love it. It is SO similar to the ground meat you use and would be a great alternative you could really have fun with in these kinds of recipes. But I also love that you use mushrooms and other veggie-based ingredients to mimic the flavor!! Thank you!
