PERFECT STEW Recipe from my FIRST BOOK: Meat Stew with Figs! 😍Sister of Beef Bourguignon and Tajin!
Ойын-сауық
Today I would like to cook for you a recipe from my first cookbook. This recipe is a variation of a method that is common in many different countries. This is the Refika version of Moroccan Tajine, cooked in earthenware pots, of the French Boeuf Bourguignon (Julia Child's most famous dish) and the juicy meat cooked in Southeast Turkey. In addition, I want to teach you how to cook big chunks of meat like turkey, chicken in such a lovely way and gorgeous every time you made.

Difficulty: Medium
Prep time: 15 minutes
Cooking time: 2 hours
1 kg (2,2 lb) fillet steak, 5 cm chunks, rib eye steak, entrecote or top loin steak works great as well
7 tablespoons olive oil
3 onions, sliced into circles
5 cloves garlic, whole
1 red pepper, sliced into circles
2 green peppers, sliced into circles
2 carrots, diced
1 heaped tablespoon salt
2 tablespoons flour
10 bay leaves
1.5 cups of hot water
½ cup chicken stock
1 tablespoon red pepper paste
1 teaspoon oregano
1 handful black pepper
½ cup of red wine, you can use 3-4 tablespoons instead of it
15 dried figs, divided in half
• For this recipe, I would suggest you cook the dish in a cast iron pot, as the taste will be significantly better.
• Heat the cast iron pot and pour the olive oil into the pot. Heat it until sizzles.
• Add the fillet steak chunks into the pot and seal all sides of the meat until nicely browned for two minutes.
• Remove the meat from pot and place on a sieve so that the meat does not mix with its own juices.
• Sauté the carrots and peppers in the same pot on high heat for two minutes, till the edges start to brown. Put them on the meats in the sieve.
• Add the cloves of garlic and onions into the pan and sauté for a minute.
• Put the meat and vegetables back in the pot. Sprinkle the salt and add the flour.
• Close the lid and reduce the heat to minimum. Cook it for about 2 minutes.
• Help dissolve the chicken stock with hot water.
• Add bay leaves, red pepper paste, oregano, black peppercorn and the chicken stock.
• Lastly add the wine and the juices in the bowl under the sieve and mix it well.
• Close the lid again and place the pot on smallest stove.
• Cook for about 30 minutes on lowest heat. The most important part is not to open the lid too much while cooking.
• After it cooked for 30 minutes, add the dry figs into the pot and stir.
• Then cook for 1.5 hours more with lowest heat and without removing the lid.
• At the end of 1.5 hours, the gorgeous stew is ready to eat. Enjoy with your loved ones.

Hi Team! I'm a week behind! Just made the lentil soup from last week (only with fresh mint) and it was a big hit! I think we all need collective comfort foods lately. It's pretty much the tail end of our fig season so will try this recipe next week to give you the report. In the meantime, lots of 💕

@@MA-ts9qt Hi MA the tittle of the lentil soup video of Refika is "The Soup Will SAVE THE WORLD! 🍵 Lentil Soup Recipe with a Variety of DELICIOUS Toppings!". I also know she made a second video about that type of soup as well :) hope this help!
Best thing about this is how accessible all the ingredients are. Yumm!

Hi Refika! I have to let you know I made the Ezogelin Soup today and it was amazing! Everybody loved it. It disappeared and everybody wanted more. I have to double the recipe next time. Thank you so much for sharing this wonderful recipe! Much love!
We have a fig tree in our backyard and I never know what to make with all the figs and usually end up just eating fresh or making jams. I can’t wait to try this recipe with them. Thanks so much for sharing! I’m so glad I found your channel. I love how detailed you are in explaining how to make your food.
Watching this again because it looks so good. Stews feed the world! Thank you for your lovely, joyful videos. Be well and blessed, all of you!
I love your recipes. This one is extraordinary! Forget about French style beef stew. Turkish beef stew is the way to go. Love and appreciation from America.
I made this tonight. I was so happy because it turned out just as beautiful as yours looks. I’ve never been adventurous with cooking and your videos have really inspired me to give it a go. Tomorrow I am making yoghurt. Thank you so much for making these lessons available.
Refika is a total JOY in this world! That stew made my stomach growl and her funny line “we will never be able to be thin” to her friend made me laugh. Food wine friendships…who needs to be so bony?? Love from Colorado!
Excited to see you prepare something from this cookbook, Refika. I bought an autographed copy when you opened the Etsy shop. I have loved looking through it, but haven't prepared anything from it yet. Would love to see more recipes from this lovely cookbook!

Refika just wanted to let you know that I made the ezogelin soup from your last video. Was so delicious and easy to make!! Many thanks! ❤️
This sounds interesting. A truly unique stew. Love dishes that can be stand alone like this...
This looks marvellous and I am eager to try it. I have some dried figs, but they are soft and dark and wonderful to eat as they are. I can use them and I have chicken thighs, but no wine. I will have to get some wine & then try it. When I was a very little girl (I am 73 just yesterday), my father often used to bring figs home for us to eat. It was the 1950’s and we were in Vancouver, B.C., Canada. I still remember those dried figs he brought. They were all on a string of twine and they were still sort of soft. Not dried hard, like apricots or something. I loved the rich taste and the texture of the “meat” inside. They were light coloured like the ones you showed. He showed me how to hold the fig by it’s hard tiny stem and chew on the rest of it. I don’t meet many people who have ever eaten figs. I never ate a fresh one, only dried, until a friend of mine grew a tree of them in her yard. (We live in a small town on the southern coast of British Columbia, in Canada, called The Sunshine Coast.) For the first time I had a fig, warm from the sun, fresh off the tree - right there, picked it and ate it. W O W - what a difference in texture. It still had the little crunchy (seeds?) in, but it was so very soft and rich and . . . . . and . . . and . . . . . . . decadent. Amazing fruit!!! She only had a small, young tree and so there were not many (at a time) to eat, but I certainly enjoyed the few I had, from time to time. So, I can imagine how that stew tastes and I am just drooling thinking about it. I will have to make it soon. Thank you for the joy you bring to my days. I hope the strange weather/storms have not brought you any hardships. May God smile on you and your household. 🙏🏼💖🙏🏼 👵🏻🐾💕🇨🇦
Oh my goodness, this looks so delicious! Perfect for a cold Canadian winter night! I simply can't wait to try it!

Hello Refika! I do a similar recipe with two changes. I use dates instead of figs because I can get better dates at this time of year than dates here in Italy. The other thing I do differently is I flour the meat before heating it. I find this produces more fond on the bottom of the pan and saves me the step of collecting the juice from the meat after browning. One less step and one less bowl and colander to clean!I've tried it both ways and they come out the same.

@@Refika Medjools are the obvious choice for the dates but other dates like Piarom and Deglet Noor also work well. I like the caramel and toffee notes they bring to the stew.
Wow. That looks incredibly delicious. Thanks for the love. Have a great weekend!
Patiently waiting for the English version of your cookbook! 😉
She's right about the fresh bay leaves. I tried them for the 1st time last year and man, what a difference!
This stew looks incredible! I have never seen a little tree of bay leaves like yours but then I realized I buy my dried bay leaves from a company that gets them in Turkey! I'll bet they're even better fresh. I love your creative yet analytical approach to cooking. Still bingeing your videos, thank you!
I’m so glad cooler weather is in the forecast because this was our favorite recipe last winter and we cannot wait to have it again.
I’ve only ever seen the flat, round figs here and I like them so I’d have to use those. This looks so delicious.

I will definitely make this beautiful beef stew 🍷 thank you for sharing your gift, the love of cooking delicious food 💝
Oh Man, I am absolutely going to try this. Yum yum yummy
Wow fabulous I have never tried meat with figs I’m drooling 🤤 yum thanks for all your wonderful recipes ❤️
We (Craig taster & Margery cook) are definitely going to try this! We will never be “thin” either.
Must be amazing with the fillet...but it is expensive! Other cuts of beef would probably work just as great with longer cooking time. Did you consider putting the pot in the oven at about 150 or 160 C and cook it longer? Tougher cuts of beef would be just as soft as fillet at the end! I will definitely try it with dried figs! Looks absolutely delicious!🤩👍

Hmm what about a chuck roast? I just bought a 2qt enameled cast iron dutch oven for $20 (black friday sale) and I think this will be my first dinner in it. I like that you can use red wine vinegar as a sub. Much cheaper. This is my kind of meal!

@@camouflagejumpsuit I have to say, when I had the dish with the prunes they had their pits in them. For some reason I loved the dish more with the pits than without. I wish I could tell you why, but I have no idea, maybe because the prune became something more than a mushy sweet.

Refika, I took this wonderful recipe (minus the flour) and pressure canned it into 5 pint (500ml) jars. It cooked for 90mins in the pressure canner and wow!!! It was so tender and beautiful. The meat had such wonderful flavour and just fell apart. When I heat it up I just have to add the flour for the gravy and its ready to serve. Takes only a couple minutes. I am so glad to have this recipe on my pantry shelf now for an easy fast meal!!! ❤
So delicious...my mouth watering...I was looking for a stew...will become a staple in my home. Thank you x
