250 gr minced meat (you can use beef, lamb or mutton, whichever you like is fine)
1 small onion, halved
4 handfuls of bread crumb, crusts removed, (alternatively, 4 slices of bread works great as well)
1/2 teaspoon baking soda or baking powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon butter (skip butter if your meat is fatty)
To garnish:
Tomato
Pepper
Yogurt
2-3 Pide (or any kind of flatbread)
1 teaspoon butter
1 cup hot water
• To prepare the köfte, add the bread crumb or slices and onion in a food processor and pulse for 30 seconds.
• Add in the minced meat, baking soda, butter, salt and black pepper. Continue to pulse until it becomes a paste.
• Wet your hands and shape the mixture into flat round patties. Press your fingers on each patty to increase the surface area. More surface area means more maillard reaction and it means more flavour!
• Heat a cast iron pan and place six patties in it and cook on medium heat.
• Flip every Köfte several times while cooking. Add the tomatoes and peppers into the pan.
• While they are cooking mix the butter with hot water and score the flat bread.
• Remove the köfte from heat and pour the half of the water and butter mixture in the pan. Right after, put in the bread as well. This way, bread will soak up the all the flavours and become more and more tasty. Repeat the same for the other patties.
• Place the bread in a dish and serve the köfte on it. Enjoy your amazing köfte with pickles or yogurt

    Refika, not only are your recipes extremely delicious and really fast - which is the only recipes I look for, but you are a wonderful person! You are authentic, I love your humor and the people's around you and also how you don't need to present a perfect show. You sometimes might use vegetables that are a bit oldish which shows how a real kitchen works. I love your English and I love when some bloopers happen. You give us many substitutes for the ingredients and the explanations for why you use the different techniques is extremely helpful. I have tried some of your recipes and they are out of this world. I sometimes watch your recipes for my relaxation but I get too excited 😁 Thank you so much for sharing your character and food with us!!!     People are not enemies because of some political situations. Countries, may be. But absolutely not people. They tried to make us believe we are, for hundreds of years but we shouldn't buy it anymore.. I am a Turk, and I have no reason to hate you. Because I don't know you, so you can't be my enemy. I only know you are a human being like me, you have feelings; joy, sadness, fear, anger and you have regrets you have "what if"s in life, just like me.. I have no idea who you are but I can understand you. Hate is never an easy thing, but understanding is. We all need to remember this.

    Also ı wanna add,,, realy believe me,, in turkey we have no any special hate sentences in education system,,, Only history lessons explain,,, Britain, France, italy, Greece attacked us in 1918-9 and we kicked them out,,, nothing personal about british, French, italian or greek People,,,, Nothing more related with citizens

    My mom is German and Scottish and I grew up eating Kofte. My mom just called it meatballs and my great great great grandmother taught her.     @@guillermija Well both as wet....lol! The difference between Drool and Slobber. ... When used as verbs, drool means to secrete saliva, especially in anticipation of food, whereas slobber means to allow saliva or liquid to run from one's mouth...you could say your dog gave you a slobbering kiss, or the man was a , slack mouth, slobbering idiot with no table manners.

    Since you did a colab with Alex @frenchguycooking I cannot get enough of you Refika. You act like a bridge between Turkish cuisine and us, bringing all the goodness here on your channel for us to enjoy and of course, try and replicate.     Hello I'm from Serbia. We call that "Ćufte" and we cook them in tomato soup. Well ,we spent 500 year's under Turkish command, so we gotta have familiar names for food. Kebab- Ćevap, džezva- pot for cooking coffee, budala- crazy man, baba-old women, đevrek - pastry with "susam " ⭕ shape. Susam- sesame. Aman- it means a lot of thing" cut it out, stop, it's enough, it's to much" approximately 8000-10 000 Turkish words in our language. 🙂.

    I made these with moose meat and they were incredibly moist and delicious, something that doesn't always happen with moose as it is a very lean wild meat. Now I need to write the recipe out into my recipe book to keep forever! Cheers, lady 🇨🇦

    In my garden I grow a lot of peperoni and chilis (among them turkish ones : acı sivri kil, çarliston, acı dolma). I prepare a lot of preserved sauces, also turşu, jams. I also dry peperoni slices and chop it in small flakes. These flakes are a super great ingredient in köfte, because while the meat+onion+bread is resting overnight they re-moisture with the mixture's liquids and don't bring extra water, but a nefiiiiis summery flavor! Other tip : very often in the Balkans they let rest for a couple of hours crushed garlic in a small amount of water, filter and add only the water into the köfte mixture. It brings an extra flavour without risking to have a burnt garlic taste (which might occur if you put chopped garlic into the mixture).

    Refika, you are amazing. I have been subscribed and watching you since May 2020 and I think you're absolutely wonderful. I believe in my heart that Turkish food is my long lost soul love. :) Truly! However I have Celiac disease and eat an entirely grain free diet. I was wondering if you have any thoughts on how to get Kofte perfect without breadcrumbs. Also, maybe you could do an episode wherein you list several Turkish foods that are prepared without gluten or dairy always safe to those of us that have to avoid gluten and dairy to eat when we visit Turkey or when we're in a Turkish restaurant?     my first taste of this meatball was when I was part of a tour group offered by Turkish Airline during my 9 hours layover in Istanbul in 2016, between the Hagia Sophia and the Blue Mosque, they took us to lunch with your meatballs. I was expecting Italian meatball with sub, lol but so glad I had tasted real Turkish meatballs.

    I made this…! Right down to the bread infused with butter water! Omg! It’s amazing… i didn’t have any green chilies so i spiced it up with some cayenne and paprika and substituted the fresh green chilies with green (spring) onions soooooo….. delicious! Yeeeeeeeuuuuummmmm….. I also put yogurt on the side with dried mint mixed in it… so yummy!

    Thank you so much for this wonderful recipe. I tried this recipe today. Kefta turned out amazing. My family enjoyed it very much. Tender and Juicy.I used 2 Ibs ground beef with 2 medium onions. , some stale bread. My kefta had little sweetness to them. I wonder if it was because of the onions. Next recipe on my list is pide. Can’t wait to try it.

    Merhaba Refika... Can u please share with us how to make Iskender Kebap. I was in Turkey 2 years ago and had the best I've ever had in Bursa. It made me cry... Every other Iskender Kebap I've tasted in Turkish restaurants in Singapore was a joke. I'd appreciate it if you can show us how. 💕

    Hi Refika! I live in the USA. My 16 years old daughter took a cooking class in high school. Her teacher assigned her and her classmates a final project to cook a nice recipe. We chose your recipe because it looked so delicious and different than American foods. We sent her teacher your recipe and she said that we have to cook healthier version of it. We changed the ground beef to ground chicken. We got so mad at her first because she messed up our recipe! We cooked it with ground chicken and omg! Thank god she changed it!!!It was so delicious! We already made this recipe three times. You should try it too! Thank you!!!
