Every year we make a few batches of candy canes without food coloring or corn syrup so everyone can enjoy our candy canes. These white candy canes are actually traditional as candy canes were white in the Victorian period where candy canes gained their popularity. Our snow candy canes are peppermint flavored and are much larger than store bought candy canes.

Took me a second. I was thinking the stripes of the candy cane, then h strated with 7 nation army and thought it was an odd phrase and then I did the math.

I feel the time he lets it pour out is intentional cuz if he spends too much time gettin every drop out, then it will cool too fast on the table; esp when acids or/and colours need mixed in on the coolin table
Those are amazing, I like the monochrome look even more than the "traditional" red and white that we use now.

Seeing Greg pull the candy with a smile is always such a gem. You can see how much he really enjoys his craft as well as making sure that everyone gets the chance to experience eating candy.

Thank you! My mom can rarely ever have candy canes because of her dye allergy and I've recently developed one as well. It's great to see people actually taking these allergies seriously.

We only use normal corn syrup

It depends on what How long I'm pulling. I aim for 15% for image candy, a bit more for canes.
Oh my gosh! These are the best candy cane I have ever tasted. After watching this video (last year 2018). I bought 6 (wished I had ordered more). My daughter and I are allergic to corn. (And I have a problem with dyes). We have tried the ones made with rice syrup 😝 and they had a bad after taste and not enough peppermint. (Sorry it makes your eyes water, but it is the best). This year I put in my order as soon as I found out you were ready to make them. Love you guys. Have a peaceful day.😊

Hey Greg, I love watching your videos. I've learned so much about candy making, and it always bring a smile to my face. Your videos are both incredibly informative and relaxing. Won't lie, might have caught myself starting to doze off once or twice... Every-time I see a video from you though, it always brings a smile to my face. I'm also glad to see that you're back up and running after that hurricane! -PS, I absolutely LOVE the brass rollers for the one drop-machine. Those are amazing. Do you have all the ones you might want or need? Or have you put thought to possibly getting a metal-smith trying to make you some extra ones? I know it wouldn't be the same as ones from the 1800's, but if a shoe fits. Thanks again for another lovely video!
I love that yall think about things like this (or have been informed by customers desirin such and remembered it; either way), bcuz tiny little accomodations like this can mean the world to those they impact. I kno even as an amateur baker myself ive gotten to get a small sense of the feelin of compersion from bein able to accomodate someone when id made a rice based bread mostly just to try it and when i shared it with some friends; one of them was a person who cant ever eat bread cuz of gluten allergy and who was happy to scarf several of the mini loaves down :3 Similarly, at our local LARP group, Amtgard, its commonplace for any feast to have the main dish made sans spice originally and then split off and seasoned afterward bcuz of a shockin number of folks who cant have garlic or onion or random spices otherwise. Tho even when it was just the one person, it was still commonplace for the feastpreppers to know of such and prepare a plate or two worth of fhe feast food without seasonin for said person. It may not be the version of the food or candy **we** wud want to consume, esp not myself as i have to way overseason food to rly enjoy it; but thats still no reason why we cant make it the "inferior" way for those who want it as such, or need it as such. Ofc, we need to be aware of such in the first place tho, cuz its just not intuitive to consider that others may need their food without corn syrup, food dyes, spices, random veggies/fruits/meats, gluten, grains, etc. Once aware, it rly means a lot to those who find their needs accomodated; cuz you took the time to try to serve everyone, not just prty much everyone.
