I made the processed cheese from ultra pasteurized milk and it worked like a charm! Thank you, I'm going to try all of them.
I'm from the Philippines. I've been a vegetarian since birth. This has been extremely educational for me. You've inspired me to make more healthy choices by choosing to make my own cheeses at home instead of buying processed cheeses from the market. This way, I know exactly what goes into my food. It's a bit time consuming so it's good to make it on the weekends and in bigger batches so I can consume more. I realized a good natural preservative is salt. Celtic salt is a healthy alternative to regular table salt. It makes things more expensive, but at least I know it's good cheese, homemade and healthier than store bought cheeses. Thanks.

❤thank you ! I have watched several of your videos. I love them all so far. I’m in California USA. I have been doing a lot of Indian cooking. I’m doing Ayurveda it has made me realize just how much we Americans do not take care of ourselves. We eat terribly bad. To put it bluntly most of us are dumb. 😂 I have learned a lot. And, I don’t want to stop. Just by making my first few dishes. I couldn’t believe how I felt. I actually felt alive my husband said he was on fire at work.(meaning he had a ton of energy.) myself as well. There’s so much to it. I made kitcheri 3 different chutneys to eat with it. They were for each Dosha. And omgoodness everything was so delicious. Next I’m learning yogurt and the cheeses oh and ghee. Your videos are perfect. You show all the steps and explain everything. Ayurveda is no more a credible medical system than bloodletting. Indians at a comparable wealth level and lifestyle aren't any healthier than Americans. Infact, because medical facilities and medical education are not nearly as accessible and pervasive in India, "Ayurveda" and other quackery of the sort are able to kill or debilitate far more people than crystal healing, naturopathy bullshit will be able to kill in America. India has one of the highest rates of cardiovascular diseases in the world precisely because food quality and availability is poor and a good chunk of the population deliberately hamstring themselves and their children because of toxic vegetarianism (thanks a lot, Brahminism and Ayurveda). Do yourself a favour and don't plunge into anti-scientific bullshit. And if you must insist on driving yourself off the cliff, at the very least, don't do what the "shuddha shakahari" numbskulls in India do and drag your kids into this craziness. You shouldn't be willfully making choices that will hamper your kids' health and wellbeing, just because you fell behind in science education.

If you put the curds into a tofu press you can make paneer which is an awesome meat substitute, I'm not even a vegetarian but I eat paneer all the time because it just tastes better than meat (after seasoning at least). Plus it's just 3$ a block, you can even recycle spoiled milk by doing this, I just used month old spoiled milk and it made regular paneer. I make sure to boil it longer though if I use spoiled, I don't think you really have to boil it for longer than usual but just in case
