4 Levels of Quesadilla: Amateur to Food Scientist | Epicurious

Ойын-сауық

We challenged chefs of three different skill levels - amateur John, home cook Alejandro, and executive chef Saul Montiel from Cantina Rooftop - to make us their best quesadilla recipe. Once each level of chef had presented their cheesy creation, we asked expert food scientist Rose to explain the choices each made along the way - both good and bad. Which quesadilla are you ripping and dipping first?

Alejandro made his take on a quesadilla/taco we have here in Mexico, that is called "gringa", (that literally means, someone from the U.S., culloquially) because it is made white flour tortilla, since we use mainly corn tortillas... but is still a mexican dish... Saul made a traditional quesadilla, he combined the ingredients in a high class way, but still traditional... we do not combine them.... pumpkin flower is very traditional for a quesadilla and is so so so delicious, try it, come to mexico, I'll invite you some.
