We challenged chefs of three different skill levels - amateur Jerry, home cook Daniel, and professional chef Saul Montiel from Cantina Rooftop - to whip us up a fresh batch of tortilla chips and guacamole. Once each level of chef had presented their creation, we asked expert food scientist Rose to explain the choices they made along the way - both good and bad. Which guac are you putting on lock?

Actually, in Mexico we put guacamole in most any food, from totopos (what you guys call "tortilla chips"), chicharrón (pork rind), tacos, enchiladas, chilaquiles, as a side for grilled meat, even hotdogs and burgers.
The Mexican disappointed dad look Chef gives when he hears about Dan using beans in the guac is so authentic 😂😂😂

I love watching chef Saul cooking. He is definitely deserves his own cooking show. This man’s got an amazing gift . I’m hoping to see him in tv show. So entertaining. Love his sense of humor

Ok, we all know that Saul is a level 3 chef, but in this video his guacamole just screams "I am on a whole another dimension". That explains why he was so confident right from the beginning.

It can be easy to forget how good he is because he's got such a friendly personality, but my sense from watching the ingredient swap videos is that he's the best improviser of anyone on this channel. Truly talented guy.
Chef Saul needs to do a Mexican basics. Love his upscale stuff, but the “lesser” chefs/cooks don’t even get the basics right

I mean, in Mexico it's pretty common to have both guacamole and frijoles refritos (mashed fried beans) as side dishes.... but never mixed together 😂

I always try to do my best at following chef Saul when cooking mexican food because I try to make it my little pinch of respect for mexican culture and food. Thanks Saul for showing us and thank you Mexico for your beautiful culture and you unbeliveable delicious food. Greetings from Argentina.
As a Mexican, I'm skipping level 2 altogether. I mean, live your life but I opt out of it. Saul just... intrigues me. That guacamole must taste really fresh

I have been to Cantina Rooftop for my bachelorette party. The food and drinks are so good. It took me a minute to realize Saul works at Cantina. I highly recommend this restaurant to anyone in NYC. Just make reservations. Definitely want to come here again for my birthday.
Saul, Lorenzo and Frank should have a cook off. Also it will be super funny for them to meet.

I’m Mexican. I’d totally eat Jerry’s guac but not Daniel’s because of the type of avocado he used AND THE FRIJOLES 😩 There’s not question about chef Saul’s guac. He’s a paisano🇲🇽

Saul's energy is everything. I can't believe I've been wasting literal years of my life removing avocado pits with a knife.
These are the feel good chefs, Jerry, Daniel and ofc Saul. They're always so smiling and happy, it's nice to see them cook. Saul just brightens my day!

I NEED to try Saul's Guacamole. I'm Mexican, 90% of my dishes include beans, but in the Guac? Daniel sorry, but it's a no go for me. It makes my day better seeing Saul and Daniel cook.
8:09 - 8:23 The look on Saul's face right after he popped that pit out cracked me up. And I did say, "Wow, thank you!" just before he said, "You're welcome." I had always gotten the pit out the way that Daniel did, but I know that that is a dangerous way because if you miss, you could be in hand surgery the following morning. So thank you, Saul! I really am amazed I had not thought of that before. 🙃

@@animelover7506 yes avocado and tomatoes are fruits. I think most people know this, but they're staple ingredients in guacamole so I'm pretty sure he wasn't referring to those, but rather more unconventional additions to the dish like the pineapple.

Saul is the entertainment and the skills. Home cook is to give you ideas on cooking things. Amateur is to make you feel better about your cooking (unless you are one)
I've had a gauc with pomegranate seeds.. absolutely a game changer, y'all! Would love to try Saul's.

Saul is my hero. I have to watch any one of the 4 levels videos that he's in.

I’m Dominican but I agree with Saul about the Dominican avocados. They have way too much liquid for a guacamole. I’ve learned from experience 😂. Best to save those large avocados to eat in slices as a side to your rice, beans and meat.

Chef Saul is a national treasure.
Why not make a series where you put chef's go head to head with each other. Level 1 chef vs another level 1 chef, level 2 chef vs level 2 chef. Things like that. I'd give anything to watch Saul and Frank fight tooth and nail to win.

I'd love to see something like give Saul and Frank the exact same ingredients with no other directions and see what they make. Or something like one of them starts a dish and then halfway through the other has to take over and finish it (with no input from the first). Doesn't even have to be a competition!

Chef Saul’s method of removing the avocado pit left me literally mind blown. Ngl.
The way Chef Saul cooks with his ears ("that... is the sound of happiness") makes me so happy.
Level 0: "So first we head to Walmart to buy our Doritos and dips"
Saul just blew away all the other chefs with a god damn masterpiece
