4 Levels of Calamari: Amateur to Food Scientist | Epicurious
Тәжірибелік нұсқаулар және стиль
We challenged chefs of three different skill levels - amateur John, home cook Daniel, and professional chef Taka Sakaeda - to fry us up some calamari. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which fried calamari are you reaching for first?

And now, he's dealing with an incident where his how grown giant squid flipped a vessel. RUMINT has it he's also struggling to put it down.
level 1 john just needed to lightly coat the calamari in some flour before the egg mixture and it woulda turned out great

@@captainkirk4271 frozen is fine, it's consistent quality and it's convenient to keep and prep

You are correct but you didn't say why. Wet does not like to stick to wet and dry does not like to stick to dry. This is why you put (wet) meat in (dry) flour before you put it in (wet) egg (the binder) then the (dry) dredge. Alternatively you can put it back in the egg then dredge again.

@@captainkirk4271 pretty much all seafood is frozen at sea these days.
What I like is that the more skilled/profesionnal the chef is, the more fresh the calmar is 😂

Ok
Taka on point, the tentacles ARE the best part! Would eat a bucket of just tentacles.
The first guy skipped dredging in flour before the egg, that's why the crumbs slid off. Shallow frying in a pan means the oil lost it's temp too quickly, which would've stewed the squid before it got crispy. Deep frying ensures a quicker cook and more tender squid. Rice flour is also great for fried squid
Oh my goodness Taka's calamari and sauce just looks so amazing I cannot
I’m upset we didn’t get to see Desi microwave some calamari and cheese 😂
I was kinda hoping the scientist judges best taste in a blind taste test. But I’m obsessed with this series!!!
I'd be happy to try any of these three recipes to be honest!

They're definitely not all there at the same time
Nice to see more variety with the level 3 chefs. Wanna see lesh again! I'd like to see 3 levels of smoked duck 😋
As someone who indulges in street calamari everyday after school back in hs, got to agree with chef taka that the tentacles were the best parts 🤤🤤 it's like all the flavor is concentrated there
we’re making calamari in class currently, this video couldn’t of come at a better time :D
So glad to see Daniel again 😊
They didn't bring Emiliy nor Frank because he is teaching Emily to fish her own Squid
i dont know if it is alot to ask since i dont wanna come off negative or critizising but id really like to see everyone try each others dishes aswell

I was thinking the same
They all look delicious 😋
Level 1 chef before dredging : I don't wanna see any white anymore *proceeds to dredge all at once itstead of singulars* Ends up with barely dredged calamari
I feel like the level 2 chefs are always viewing this as their ticket to the big time, so they amp up their personalities as much as possible.
I keep seeing Daniel in some body wash ad on Facebook and everybody in the comments is THIRSTY lol glad we still have him here haha
I'm sure all of them are really tasty 😊 Taka is a genius, honestly, yuzu mayo sounds delicious. I was glad to see Rose too

Epicurious is the reason I bought a pair of those pans with contained rack! Life/culinary/game changer. I thank you so much.
to ensure if you do john recipe that the egg and bread crumbs stick to the calamari, before dredging in the eggs, dip them in flour, the eggs will stick better, and therefore the breadcrumbs too!! :)
John is like a 1.999999 lvl but they don’t want to make him lvl 2 because they are running out of level 1 chefs lol
i really wanna try all of them 🤤
beautiful product
This looks delicious!!!
I swear I just saw Daniel on a Panera Bread ad
In Italy we don't use egg in the "breading" part. We use just starch, and not either starch+water. We don't use that, because a big and flavoured coverture, just like tempura for example, will cover the taste of the calamari. And we don't want they taste like a zucchini tempura.
My favorite calamari dish is linguine calamari it’s basically spaghetti with squid all over it
Only recall having calamari once when I was a kid at a bar with my dad. I always liked fried shrimp and the calamari to me wasn't much different so I enjoyed it.
it's been a long time for John & Daniel
Dang it I always watch these while I'm starving
All 3 looks so amazing my mouth is watering 😋😋😋😋😋
Shout out to Rose!! She always teaches me something
Would've loved to have seen someone make this Rhode Island style and throw some sliced cherry peppers in with them.
Level 2 chef is finnnnne!
can you please do 2 pro chefs swap ingredients and see which is better ?
Why i keep watching these epicurious.. Just end up hungry 😅
Daniel i missed you (bc ive been busy and couldnt watch videos in a very long time)
babe wake up a new 4 levels just dropped
Welcome back everyone!
Wait... when did Daniel level up? Congrats to him!

best part is they all loved what they cooked
Love chef Taka!!
I would eat all of them, but Daniel's looks the best
Level 2 chef won this.
I would love Chef Taka's fried calamari with a beer
YESSSS!!!! Something I've always been curious about!
i love john's calamari 😁he da best!
A rare video where the level 3 one actually looks best
Se ve muy bueno
This is awesome it was only a couple months ago that I commented on how cool it would be if they cooked calamari. Thank you for another awesome video
I would do level 2... Recipe of course 😏😏
Que ricas comidas, grandes cocineros.
Why am I watching this while fasting
My favorite kind of Squid Game.
As someone who lived in New England for a long time I was disappointed not to see fried pepper rings in any of them.
I'd eat all three of those, but the fact that level 3 used tentacles gives him a heads up. Level 1 - the commercial breading with an excess of ingredients is something I'd usually avoid.
Add a blind taste test and you’ve got the next big cooking show.
I'm surprised Daniel didn't make octopus instead!
the level 1 dish was made for our self. the level 2 dish was made for family. the level 3 dish was made for customers
Just watched this on TikTok now I’m here
Ugh now i want fried calamary
Johns back❤
The music transported me to Sims 2
Johns lemon cutting WTAF
GIMME ALL 3 :D
Was that Daniel I saw on a recent Panera commercial? Or a doppelganger?
this is a street food here in the ph and paired with vinegar❤
THE LEVEL 1 CHEF SKIPPED A WHOLE STEP. ALL THE BREADCRUMBS FELL OFF 🤣
Yay calamariiiiiii
Level 1 and Level 2 seem pretty close to me… not sure what almond milk if it doesn’t have acidity in the marinade. Another fun video either way.
Please do a method mastery about herbs.
1:09 Was the gladius ever used as a pen throughout history? Google only gave me one reddit commentor saying it isnt a great pen (mostly due to price - quality comparison).
I love fried calamari, but that bag o'frozen squid rings didn't look real. It was interesting seeing the whole squid prepared. One thing nobody stressed was how quickly calamari has to be fried, ~3ish minutes in 375 degree oil. Go too long and they get rubbery.
Me, a level 0: Goes to the frozen aisle and buys frozen calamari
Thank The Universe I love these guys and will watch anyway, because I don’t want to learn how anyone prepares or eats squid. 🙃
Level 2 won the battle 🎉
4 levels of calamari 1. deep fried 2. pan fried / sauté 3. braised 4. grilled
Can you do a video on Ceviche??👀👀👀👀
yummy
Frank would be here if he wasnt too busy making his own water for his squid to grow in
Now I am craving some tentacles.
I’m really disappointed that the food scientist doesn’t taste and rank them all
I’m so mad I thought they’re going to tell us who won at the end of the video
so hungry now
I eat calamari as is. It doesn't need sauce just seasoning.
*I REFUSE TO WATCH ANY VIDEO THAT DOESNT HAVE LORENZO IN IT* But i love calamari so...
I would gladly have all three and eat Taka's squid afterwards.
Can you do 4 Levels of Tiramisu?
I remember buying squid for 39 cents a pound. Then they changed the name to calamari and the price shot up.
Bueno
Love the veganaise option for those of us who don't mix with eggs/mayo!
if you put them all togther like that they stick together when you drop the basket. you still have to put them in one by one
Chefs
I swear when I saw Taka’s squid I LOLed
