In this video, I am showing how make three easy side dishes using Eggplant.
1. Grilled Eggplant with soy sauce
2. Steamed Eggplant with spicy sauce
3. Mapo Eggplant (Mapo Nasu)

Ingredients for 3 Recipes with Eggplant:
Grilled Eggplant with soy sauce
- Eggplant 1/2-1
- Grated ginger small piece
- Soy sauce 1 Tsp
- Bonito flake 1-2 g
Steamed Eggplant with spicy sauce
- Eggplant 1/2-1
- Garlic 1 clove
- Ginger small piece
- Soy sauce 1 Tbsp
- Vinegar 2 Tsp
- Sugar 1/2 Tsp
- Sesame oil 1 Tbsp
Mapo Eggplant
- Eggplant 1/2-1
- Minced pork 50 g
- Scallion 1
- Garlic 1 clove
- Ginger small piece
- Chili bean sauce 1 Tsp
- Miso 1 Tsp
- Soy sauce 1 Tsp
- Water 1/2 cup
- Sesame oil 1 Tbsp
- Starch 1/2 Tsp

Vegetarian/vegan substitute for bonito flakes or dashi: kombu seaweed and shiitake mushroom. You can also find vegetarian dashi packets in Asian groceries. I even found it in an American store near the soy sauce. And of course use tofu or tempeh instead of meat.

Hi there, I love your videos! A suggestion- if u make small holes in the eggplant with a fork it shouldn’t explode.
Hello Taiji, and thank you for these very simple and wonderful recipes. If you want to try a portuguese version: slice the eggplants, put them on an oven tray, drizzle some olive oil over it, plus salt, rosemary leaves and some minced garlic. Roast in the oven for 20 minutes. Deeeee-licious! 🤩🤩🤩

I made the steamed eggplant with spicy sauce. Had a big eggplant so had leftovers second and third day and found the dish tasted better the longer I kept it in the fridge!

cool, from Canada! I got it as a bd present, so I don't really know, but it says Kuechenprofi (meaning kitchen professional in German). no idea, if it is sold also outside of Germany. but its the same as any old garlic smasher, I think.

@@Junglecat74 No problem! Hope you will find it, it’s not exactly the same but I find it even better because it’s made of steel, and the inner part is removable, so cleaning is very easy. :D

Do you ever salt the eggplant before cooking to draw out bitterness? 🤔 Also if you have gas you can char the eggplant to add a smokey flavour, very delicious 🤤

no I dont do that, but will give it a try! thanx for the tips!
The grilled eggplant in the oven gets more aroma and doesn’t explode if you cut it at least in half. And Mapo Something without Szechuan-Pepper is not „mapo“. But I like the combination with eggplant instead of tofu.
what kind of rice are you using?

I usually use Yume-nishiki. if you are in the US, I would suggest Nishiki.
