$250 vs $25 Pasta Bolognese: Pro Chef & Home Cook Swap Ingredients | Epicurious

Expert chef Frank Proto from the Institute of Culinary Education and home cook John are swapping materials and hoping for the best! We gave John $250 worth of ingredients and Frank's recipe notebook, then asked him to recreate Frank's Pasta Bolognese as best he could. Luckily, food scientist Rose was available for a brief pep talk and consultation. On the other side, Frank received $25 worth of goods and tried to improvise his way up to gourmet. Who achieved the most impressive sauce under these mixed up circumstances?

I like Frank as a chef: he’s not afraid to say things that other high level chefs would find “low brow”. This is a guy who likes using fresh ingredients, but also says he likes American cheese & boxed wine, and that’s awesome! You go Frank!

The difference between Frank and a lot of other chefs is that Frank is concerned with his cooking and if he finds something cheap that works wonders he's going to use it. Other chefs are so concerned with their image and popularity that they won't allow themselves to be seen with anything "common". Then again most big show chefs don't make their own recipes anymore, they have a test kitchen team for that.

@@jamesmerkel1932 Well what kind of chefs? Gordon ramsay for example enjoys simple ingredients if he can use them properly, but he sometimes uses more expensive ingredients to enhance flavor

@@shadonovic I would say Ramsey is one of the exceptions as opposed to the rule. He doesn't give a damn what anyone thinks if they don't like him, and is more than happy to demonstrate that. Look back at a majority of your tv chefs, and they're always talking about how they're using a premium ingredient and then offer "cheaper alternatives if you can't find or afford" what they're using. This typically is in relation to meats, mushrooms, wines and cheeses, as well as specific spices such as actual spanish saffron for example. There really are only a handful of famous chefs that don't have an image bias. Frank may not have that level of stardom, but he's VERY good and pretty down to earth.

nobody: Frank: i didn’t like the air i was breathing so i created my own periodic element
recipe for making Bolognese pasta: (called by an Italian) take a pan and put two turns of oil then take onion carrots and celery and sauté as soon as the onions turn golden put the meat after about 5 minutes put the wine and the tomato sauce let it go for about 48 hours on fire low, when the sauce is ready, take a pot, fill it with water and put the salt, leave it on the stove and as soon as it boils, throw the spaghetti and cook them for 10 minutes as soon as the pasta is ready, mix it with the meat. and here is the Italian pasta with ragù (bolognese)

Thing is, there really is a point of diminishing returns when it comes to expensive ingredients. The prices on some of those ingredients were kinda ridiculous even though they're undeniably going to yield a better dish. Of course it also doesn't feel like that $25 dish should have cost $25 either, so I'm probably just boggling at how much groceries cost in New York.

It doesnt matter who you are, chef or not, if you cook for someone, you have to know if they liked it or not. You wanna hear that they enjoyed it. Cooking for someone is a very personal thing especially if you used their recipe. 😁

It's always the innuendos with John everytime he's cooking with meat 😂

He knew he did well, I just think he meant "Did I do ok" as in in comparison to the recipe he was given by John - the home cook. As John made the recipe and selected the ingredients, but Frank used his skills as a chef to elevate it, and was more-so asking if it was ok as in similar to what John was expecting, not ok as in is the food ok

That wasn't what I expected, based on comments in other videos, but you're right, he comes across as kind and not at all arrogant or condescending. He was equally gracious in the spaghetti and meatballs video with Beth.

I taste the food so much often times I eat like two servings of it by the time I'm done cooking and I have to tell my Fiancée that I "just don't feel hungry right now"
Man I love Frank! He's so professional yet humble at the same time, doesn't come across as arrogant or conceited, so encouraging at all times.
I Love watching home cooks figure out the "high end" recipes Frank comes up with. I don't need anymore shows using CHEAP ingredients.

That made me think, and figured out that they do not know, when coming to epicurious kitchen studio, if they will cook their own version of a certain meal or get swapped. And believe me, when you prepare for a nice dish, you already cooked it in your head, than turns out you have to do it with other ingredients, possibly you won't have this or that and you're screwed. :D
