Welcome to my channel. It's all about living well with what we have. I will be featuring lots of videos of good country cooking such as fried pork chops, country style steak, cornbread and much more. Most of my recipes are simple and use ingredients that you likely already have in your pantry. I will also have DIY how-to's for minor jobs around the house, sewing projects, freezing foods and stories sharing what it was like growing up in the late 50's and 60's and even some of the fun and silly antics of my pets. I may even have some silly antics of my husband, Mr. Ron. I truly hope that my videos will be of help to others who would like to learn good old southern cooking and lots more videos will be coming soon.     Growing up in rural Georgia and being very poor, we made Hoe Cakes with no sugar and no egg. Still make them that way to this day.

    This is a wonderful way to make cornbread. Make it fried and on the stove top. We love my cornbread cooked in the oven. However, in our part of the country, it's too hot to use our oven in the summertime. This is a great idea. Thank you for this wonderful recipe.

    It's quick and easy when you don't want to make it in the oven. You're right, it doesn't heat up the kitchen like the oven does. I think that's why Granny and my Mom made it this way so often. We didn't have AC when I was growing up, so it would get pretty hot in the summer. Thanks so much for watching!

    This recipe is very good, thank you for sharing this. You forgot to put the oven temperature and minutes it bakes for, in the printed recipe.

    No, I didn't forget, lol! The oven temp and times are at 8:45 in the video (at the point where I'm covering it with the foil). 350 for 40 minutes covered and then 5 to 10 minutes uncovered to lightly brown the cheese. Thanks for watching!

    I sure did enjoy this video! Since the insta pots came out not many videos of ‘pressure cooker dinners’ have been shown. I have a Presto pressure cooker and love it thank you so much for this video! What else do you cook in your pressure cooker? Ide love to see a video of other things you cook in it. I do have an insta pot and I like it also . I have just got sad that the pressure cookers have been left out of our new videos. No fair. They are the forerunners and my mom used them too. Soups, stews, meats, vegetables, etc can be cooked in them. I’ve got a cookbook from them. The cookbook is about 6x4 inches-it’s kinda small but packed with lots of recipes. Thank you, your dinner looked great!! Made me think I have to go look in my freezer and find some roast and defrost it and cook one in my pressure cooker, along with some sweet potatoes and parsnips🤗😋

    I have cooked stews, soups, chicken, stew beef and potatoes, and pork roasts in there as well. My favorite is the beef chuck roast that I did in the video, though. I find that so many younger people are afraid of the stovetop style pressure cookers so I thought that this video might help. I've been using mine for 50+ years and never had a problem. I just make sure that I never fill it more than 2/3 full. Have a great day and thank you so much for watching!

    Hi there, hoe can you tell when the corn is cooked enough? Is there a time or a color that the corn turns to? Or do you taste a piece? Thanks for this new variation of cooking corn. Nice to know you teach 🎶 congratulations! Children need to study mare than the 3 R’s. Makes for a well rounded person. God bless you and your family.

    It depends on how done you like it. I usually only cook mine until it becomes a brighter yellow and still has a little crunch. My father used to want his cooked down until it was mushy (which I really don't like, lol). Once it changes color, just give it a taste and see if it's to your liking. Thanks so much for watching!

    I enjoyed your recipe and you telling me that you bought the squash (at the farmers market?) You have a nice easy voice to listen to. Thanks for this winner recipe. The yellow straight neck or crook neck squash is my favorite summer squash. Do you ever peel this squash? Some varieties have a thick skin/peel and doesn’t cook at the same rate. This casserole sounds great! I’ll have to look to see if I have any canned in my pantry, or it’s the grocery. I don’t think our farmers market has started up yet. I do grow some but I’m not too lucky with my squash, 1 thing or the other affects them but I still try. Do you have any recipes for ‘lemon squash’? Or that cute ‘patty pan’ squash? Or would you just put that variety in this casserole? God bless you and your family thanks for the recipes and the videos.

    Aw, thank you. I usually buy the straight neck squash so I never have to peel it. Boiling it until it's tender works very well. I think this recipe would also lend itself well to zucchini, too. I'll have to check in to the lemon squash, I haven't seen that one before. Thank you so much for your kind comment and for watching!

    Good recipe, but I would marinate the fruit on liquor of choice , add zest of orange, and age by dousing the cake with liquor. I like my fruit cake to have a kick.

    You can certainly do that, if you'd like. We don't particularly care for the taste of alcohol and orange zest can lend a bitter taste that makes most people dislike fruitcakes. This one is very buttery tasting and sweet. Also, the fruit is candied, so marinating it may not work as effectively. Of course, you could marinate the raisins. It's mainly just a matter of taste, so have fun making this recipe your own. Thanks for watching!

    So good to see a real pressure cooker being used, Elaine. I refuse to switch to the newfangled cookers and why should I? Old pressure cookers are as good as they ever were and they last forever. 👍👍👍

    I love mine! I had one of the newer ones and I gave it away. I love my old tried & true. I've had it for almost 50 years and all I have to do is replace the gasket and the overpressure plug once in a while. Thank you for watching, have a wonderful day!

    Your recipe is the same as my grandma and great grandmother’s and they made it in the 1930s and the 1940s

    I'm not surprised. I may have tweaked it from a recipe in my 1941 New American Cookbook. My mom gave it to me when I first got married. I picked up a lot of pointers from it as well as some great recipes. Many of the recipes have to be adapted to today's cooking methods, but they're still good.     Thank you for sharing this recipe!!!! I made them the other day and it was just like the brownies I had when I was younger. So good!!! The top was crackly and it was so chewy! This will be my go to recipe but my taste has changed a little in that I now prefer a richer chocolate flavor so I’ll probably use the Baker’s dark chocolate next time. Thank you 😊

    Looks delicious but won't be making this cake for 2 reasons measurements given cup measurements 2 sticks of butter haven't got a clue dont they have metric measurements in the US 21st century??. Second reason 6 eggs too many if they were less in numbers could have used alternatives to eggs but not for 6 eggs. Looks delicious though.

    Hey there Dorothy. No, we don't use metric measurements in the US and I don't see that happening any time soon. However, I looked up the measurements for you. It didn't take long on Bing to find what I was looking for, so I hope it helps you. 2 sticks of butter = 227 grams. 360 grams of egg substitute = 6 large eggs. These conversions were pretty simple for me to look up. You can also go to Google and get a conversion chart. This is typically what I do when I want to convert a recipe to cups/teaspoons, from metric. Thanks, this is a very delicious recipe. Now that you have the metric equivalents, I hope you would consider trying it. Thanks for watching.

    Elaine, I just made this Recipe today,and it is hands down,the STANDARD,for an Excellent Fruitcake! Came out perfect,and tasted FAR better than the famous Jane Parker Recipe! THIS IS IT !!

    Thank you, Denise. I hate that my chocolate chips sank to the bottom, despite coating them with flour. Oh well, it tasted good and had a great texture anyway. I'm going to slice it up and freeze the pieces tomorrow. My husband and I are both feeling a lot better now. It was just a really bad cold, no flu or covid, thankfully.     I have recently got a pressure cooker but its not Presto, it's Kuhn Rikon. You made that look so easy, would those timings work with any make of pressure cooker? Id love to try this and do a pot roast. Thanks from Northern Ireland.

    Been making this recipe for a couple years now. Always come back to make sure I get the temp & timing down as I have the memory of a hamster 😅 Hands down the easiest baked COD recipe on the internet. Delicious.
