Hi I’m chef Maha! Bringing you delicious Mediterranean cuisine & homemade recipes Passed down for many generations.
Ingredients:
+ 2 LBs beef ( I used chuck roast)
+ 2 Tbsp 7 spices
+ 1 Tsp paprika
+ 1/2 Tsp black pepper
+ 1/2 Tsp ground ginger
+ 1 Tsp ground cardamom
+ 1/2 Tsp ground mastic
+ 1/3 Tsp baking soda
+ salt to taste
+ 1/3 cup olive oil
+ 4 Tbsp red wine vinegar
For Tahini:
+ 1 cup or tahini paste
+ 5 Tbsp lemon juice
+ 1 1/4 cup water
+ 2 cloves garlic (optional)
Toppings:
+ 1 large onion julienned
+ 1/2 bundle fresh mint (finely chopped)
+ 1/2 bundle fresh parsley (finely chopped)

What an art to flip the dough to make it thinner. I ate it once near Jounieh with zaatar and lebne. You are such a skilled chef.
Okra with lamb over rice is my favorite from my Zghorta Sito's kitchen. Thank you for reminding me about the incredible fresh ingredients that grow in those Lebanese mountains. The best produce I ever ate anywhere was in those northern mountains in Eheden. Wow. I could smell your garden.
Thank you for reminding me to start with fresh beans and the baking soda. It keeps in the fridge longer and is more flavorful. I miss these foods of my childhood. I so appreciate your gifts.

Your hand movements are so graceful 💛 Clearly you are an expert. This is so much like the Rumali Roti from India. If I ever go to Lebanon, I will bring back a Saj oven. Even if it means, I can only carry 2 pairs of daily clothes with me.
Wow, thank you so much! I loveeeee roti! I recently saw online that a young Lebanese girl invented a mini portable saj which seems really cool. I think you can order it online. But before I brought mine from lebanon I used to flip a wok upside down and use that for my saj.
@@mahaslebanesecuisine thank you! I will google the portable saj. I have a convection stove so not sure if an upside down wok will work but I have seen it being used in Maharashtra to make thin “pooran polis” on a fire stove 🙂

I make this, but I don’t add walnuts. I’m gonna try it your way with walnuts. We call it in Baghdad potato chop, but we used to make them around and fry them. That’s too much work so I start making it in a pan and bake it. Great idea. With walnuts, I love walnuts.😍😋😋🔥🙏🏻❤️❤️❤️❤️

God, I am so glad I landed on your channel. I am from Baghdad. I live five years and Lebanon and I loved Lebanese food and nothing I eat from restaurants. All I make is homemade but I’m trying to look for sage everywhere, I even looked here in America, some places antique places in the farmers. I can’t find it to make those Lebanese breads. Hello thank you so much for your kind words. I have many friends from Baghdad and we love Iraq. The saj is a little hard to find in America. I brought mine from Lebanon, but before I had one I used to flip a wok upside down and used it as my saj.
