真面 Maki Mee ( Pork Noodle Soup-Perfected Recipe )

Very popular pork fillet noodle in thick brown soup. Invented by fujianese/chinese chef immigrant in southeast asian. That hit like a huge train in those region. So delicious that dinners will come back and order the same all the time.
Below are the list of those ingredients. Again thru the courtesy of Mr. Michael Taylor. Who type those list in his comment section. So we can conveniently COPY-PASTE-PRINT the same.
List of Ingredients: * created by HAPPY WOK *
NOTE: for soup making: use 6 cups water + 2 Tbsp chicken bouillon + 2 Tbsp dark soy sauce.
( got typo error on the video list of ingredients: not 6 cups broth, sorry for the error )
1 pound -- pork
1 tsp ------- baking soda (or tenderizer powder)
2 Tbsp ---- each, light soy sauce, minced garlic
1 Tbsp ---- each, rice wine & sesame oil
1 pc -------- egg (beaten)
2 Tbsp ---- corn starch
1/2 cup --- corn starch (for coating meat)
** for soup making **
6 cups ---- water
2 Tbsp chicken bouillon
2 Tbsp -- dark soy sauce
** for thicken soup **
1/2 cup ---- corn starch + 1 cup -- water
** for egg drop **
2 pcs ----- eggs (beaten)
2 Tbsp --- sesame oil
1 tsp ------ white pepper
16 oz ----- noodle (4 oz per bowl)(makes 4 bowls)
2 Tbsp --- chopped green onion per bowl

This brings back so many childhood memories.....Ha Yuan was a noodle chain in the 80s and a bowl of Maki Mi piled with spring onions was my go to meal! from 5 yrs old up to teens it was my ultimate comfort food.....it's odd how it's never seen in Western Asian restaurants......Thank you for sharing !

@@jea-seo1333 : That is nice and explain why you love maki mee. Just like my wife, who is half chinese/fujian from the Philippines.
I never ordered any pork dish at any Chinese restaurant because I am picky about how it seems to come out dry at American or Mexican restaurants. Then I finally ordered some szechuan pork and it was game over. I can not get enough of it and I am amazed at how tender it is. I am not sure if it is the frying in oil or what but it is soooo tender! This looks incredible, Chef! 👍

This is one cooking with very tendered pork fillet. We pound the pork fillet both side and added meat tenderizer ( baking soda ). Thanks for watching.

Here in manila chinatown, we use cassava flour instead of cornstarch to give it that gooey texture. We also have beef maki and fish maki

I just made this. And it is super yummy. Thanks for the recipe! My soup though did not look as translucent as yours. When I put in the cornstarch water mix, it made the soup brown like gravy. Any ideas why and what should I have done differently?

When i put cornstarch, it lightened the color the soup. But yours didn’t. How to do that?

@@HAPPYWOK I think it is either pork or chicken. I think it is cooked in casserole but I am not sure. It is a Fujian style salty rice. I do not know how to do it properly although I tried before. 😊

@@HAPPYWOK When I visited Hong Kong years ago, I ate in one local eatery similar to kiampong but they used cut Chinese sausage instead of pork. The taste was also great

Teach you another gravy brown sauce, namely (Mince Meat Dry Shitake Oyster Sauce) Ingredients: Mince meat marinated with light soy sauce, white pepper powder (ajinomoto brand), oyster sauce, fried garlic oil,,corn starch). Sauce: Boiling water soak dry shitake mushroom soft and cut slices. Keep water for later use. Stir fried Ingredients: Mince garlic, Mince shallots, big onion (diced). Seasoning: Oyster mushroom, abalone sauce (2 to 3 tbsp), sugar to taste, light soy sauce, dark soy sauce (color sufficient only), starch diluted in water for thickening sauce (pour little at a time till desire thickness). Method: put in cooking oil, stir fried garlic, shallots, dice onion, shitake mushrooms, Mince meat, add soak mushroom water, mentioned seasoning (to taste) and add starch water (right thickening). Sauce can use for any kind of noodles or thin spegethi noodles is delicious. Vegetables Blanc in boiling water awhile: Bean Sprout and hong kong or local choy sum flower. Dash of ajinomoto white pepper powder. Your version: At least add 2-3 tbsp abalone sauce, sauce base will taste better.

once you drop those in rapid boiling water, takes only 2 minutes. ( since the are tenderized with tenderizing hammer. Thanks for asking and also Thanks for watching.

You can try ground pork, but it will looks different. Use your soy sauce, if you like the color of your make mee, then your good. If you like it darker, then you need to get dark soy sauce.

*I remember eating eating this all the time in the Philippines in the 80's early 90's. The street below LRT is lined with family owned chinese restaurants serving dishes like this. Now its all fast food chains like Jollibees, Mcdonald's, KFCs. Even Chowking is nothing compared to the real thing, no sir, not even close.*

*I would just like to add that the version I eat has Bay leaves, Star Anise, Ginger, Shibot, and maybe chinese 5 spices and I would squeeze a slice of Calamansi (Calamondin) and crushed peppercorns and chili before eating it.*

I am not. The video camera mic was very close to my face. I used tripod and camcorder set up on my very left side, at eye level. And the mic is also very sensitive that it can pick up sound from refrigerator humming & noise next room. Thanks for asking.Thanks for watching.
