Black Glutinous Rice Coconut Pudding is a cold dim sum dessert found in many restaurants in Hong Kong. It is smooth, sweet, and rich in coconut flavor. The rice in the pudding gives it a nice chewy texture. Enjoy!
Ingredients:
30 grams (2½ tablespoons) black glutinous rice
720 ml (3 cups) water (for soaking and cooking rice)
400 ml coconut milk
305 ml milk
227 ml heavy whipping cream
200 grams (1 cup) white granulated sugar
40 grams (4½ tablespoons) unflavored gelatine powder
200 ml water
紫米椰汁糕材料:
紫米 30 克 (2½ 湯匙)
清水 720 毫升 (3 杯) (浸泡和煮紫米用到的水)
椰漿 400 毫升
牛奶 305 毫升
鮮忌廉 (鮮奶油) 227 毫升
白砂糖 200 克 (1 杯)
魚膠粉 (吉利丁粉) 40 克 (4½ 湯匙)
清水 200 毫升
