How to make traditional Yorkshire puddings
Yorkshire Pudding
225g / 8oz Plain or All purpose flour
4 Large Eggs
148g / 5 oz / ¼pint of water
148g / 5 oz / ¼pint of milk
½tsp salt
85g / 3oz Beef Dripping or Lard

    I remember my grandmother would make a big pot roast... pot roast and vegetables the 1st and maybe 2nd serving, Yorkshire pudding was made and served with the leftover beef and gravy for the next serving or roast beef with gravy sandwiches, and then the last of the beef was ground up and mixed with mashed potatoes and fried up as beef hash cakes, served plain or with any leftover gravy if there was any gravy was left. It is absolutely amazing to me to remember how much a good pot roast could be "stretched" out into so many wonderful tasty meals. These simple old recipes, judiciously used like my grandmother would make them, would economically produce or balance out meals from leftovers to feed a large hungry family while doing it in way that saved money without you ever becoming bored with basically eating the same meat over and over... good home cooking is somewhat becoming a lost art... the way you cooked your Yorkshire pudding makes me think of what we here, in my family in the US call "pop overs" with the same batter, my grandmother cooked her Yorkshire pudding in an ungreased pie dish, which tends to make the batter cook flat and heavier like a lighter bread... but I guess either way, the batter mix is exactly the same, the only difference between the two is cooking with oil or "dry" for the difference in the way the batter cooks up... I can personally vouch that it's great either way!!! I like your videos! This one brought me back to many childhood memories... thanks!

    Also delicious with sausage, mash and onion gravy. When we were kids, mum would make one giant Yorkshire pudding in a large roasting tin, mums would be a bit more "pudding like", but very crispy on the outside. There were 6 of us including mum and dad so a large pudding was necessary....reason being, there was always leftover Yorkshire pudding which we would spread jam on and eat as an afters or dessert.

    I remember as a kid in the U.K., having these filled with jam, or sometimes ice cream as a desert. Naturally they were served cold. On another note, similar here some locals put a small amount of beer in the mix. Not sure why though.

    Hello John. I just came across your channel. I'm not British but I love Yorkshire Pudding!! Your recipe is so easy to follow. I've never made them because I've always felt a bit intimidated by my lack of knowledge in their preparation. Now with your recipe I'm definitely going to make them for Christmas dinner this year.     I’m from West Yorkshire originally. My family were always given the Yorkshire pudding with gravy BEFORE the meat and veggies (filled us up and made the meat go a bit further I suppose). Any left over pudding mix was used to thicken the gravy !

    They are GORGEOUS ! Most of the time mine turn out nicely, sometimes they don't. I think, I was too impatient. PATRICK loves them, when a few are left, as a sweet with syrup . This reminds me cooking a TOAD IN THE HOLE again, yummy !!! JOHN, thank you so much again.

    Edwina Jones : you should have seen me when I started with BRITISH COOKING, which is a long time ago, nearly 49 years ago. Mine turned out flat as an ordinary plate, I could have thrown them as a frisbee. Sometimes they were ok. By repeating flat as a frisbee again. And I didn't know, why it went wrong. One has to have the right teacher and this is JOHN. Thanks a lot John. A quick story : we had friends for dinner. Why I had chosen YORKSHIRE PUDS, I don't know. Believe it or not they were so wonderful. My friend became very jealous, because she hardly succeded in hers, she told me. I told her I wanted to show off and I managed. Me as a GERMAN born with a dual nationality I made it !!!! I could have danced all day !!! Next time : I called it FRISBEE again. 😅😅😅

    I've been watching a lot of Yorkshire Pudding recipes and haven't been very happy with them. However, your video is so much better than anything I've seen. My husband and I are draughtsmen so accuracy is essential in what we do and so I've always been frustrated by the inconsistency of measuring ingredients in recipes.     Hello John. You make your Yorkshire puddings exactly like my late Mum used to make hers except that the beef would be roasting in the oven at the same time. We always had two lots of Yorkshire pudding with our Sunday dinner. One with the main roast beef course and another helping after that with jam, marmalade, lemon curd, syrup, honey or anything else sweet. It seems to be a closely guarded secret in Yorkshire that Yorkshire pudding is more than just a savoury dish but is also an actual pudding to follow a meal. I know that pancakes have a similar function and are made from a similar batter, but there are differences. Thank you, John, for another interesting video.

    Even the smell of them cooking takes me back to my childhood, and I've made hundreds of thousands of them at work. we used to have them on a separate plate during our Sunday lunch with lots of beef gravy on. :) thanks for the comment, much appreciated.

    At home on a Sunday we always had a full plate sized Yorkshire Pudding with gravy and onion in vinegar before the main course, the as many muffin sized puddings as you wanted with the main course.

    My Dad who was born in 1913. Told us that he used to be given a Yorkshire Pud before dinner, to fill him and his siblings up before dinner. Those were the days eh!!!

    I remember my great aunt cooking a Yorkshire on a coal fire range using her own beef dripping. It was wonderful, and eaten with gravy before the main meal to fill you up.

    We always had the same with my Yorkshire Auntie and Grandma..One served pancakes and casserole, the other served Yorkshire Pudding - both served these as a first course. It's a great way to stretch meals and make you feel full, using such simple ingredients. Great memories. I carry on their recipes and traditions too, wherever possible. Johns Yorkshire puddings look great x

    I like to share the mysteries of cooking , especially the easy basic one's like these yorky puds as they are so readily available in the stores ( not a bad thing mind) but it doesn't hurt to have these basic cooking skills under your belt, you never know when you'll need them.

    Hi John, I’m a Brit who has lived in the USA for the past 25 years. Over here, I cannot get Yorkshire pudding to work with All Purpose flour - they just don’t rise. The problem is that American All Purpose flour is made with hard red wheat, which makes it heavier and more protein rich. I find they work really well with Cake Flour, which is soft wheat, with a finer mill. Thanks for the recipes, they remind me of home!

    I am already a subscriber. I do a lot of baking and cooking and have enjoyed looking through your recipes. I’ve made your Yorkshire puddings; lemon drizzle cake and hot cross buns. Everything has turned out well, however I switch out the All Purpose flour for Cake Flour when making the cakes and Yorkshire puddings.

    Thank you for sharing this important information. I have found one brand of flour grown in the southeastern United States, White Lily unbleached flour, that I specifically use for my light and fluffy biscuits. It is milled from soft Winter wheat. If White Lily flour does not produce satisfactory results, I will purchase cake flour going forward when preparing John's recipes.

    Hi Deborah - How disappointing - such a waste of ingredients. I’m glad you thought to try the cake flour. I think I might give it a try, although I don’t have any problem with rising. I do use an all-purpose flour King Arthur - it’s an unbleached flour, just FYI.

    John, my mom lives in the States and even though I was raised there, I have lived in England for nearly 20 years. For the last ten years or so I have been trying to convince my mom that she would love Yorkies but sharing a recipe doesn't quite cut it. Thank you very much for sharing your videos, I will be sure to share this with mum as well (this might be just the kick). While I am still nervous at baking bread (more often than not it is due to your demonstration on dead yeast), your videos have given me a renewed ambition (and hopefully will be able to try my hand at my own sourdough)!

    Thanks for that Buddy, Bread making is very easy as long as you stick to the rules, especially the ingredient measurements I tell people constantly to use scales to measure everything including the water, it's the best, easiest, and the most accurate way of getting the correct quantity of ingredients, in any recipe really but most of all in bread making, and still they get onto me saying I've stuck to your recipe to the letter and the bread is flat or doughy, the only thing I did differently is convert your measurement to cups measuring jugs, it really drives me nuts, haha. I once filled a measuring jug to the 500ml mark then checked it on the scales it 125 grams too much that was a quarter of the water wrong, and don't get me started on cups. The moral is Buddy stick to my recipe and you can't go wrong. Hope your Mum does the Yorkshire pudding recipe, sure she'll enjoy them.

    John, I followed your instructions for Roast Beef & Yorkshire puddings tonight....Awesome. My roast was slightly over done. My oven is a bit warmer/ weight calculation was off, slightly. The result was entirely palatable, to make it my favorite method. First try! This will be my Christmas dinner for 2019. Thank you!

    I love your recipe and your instructions! I've been making Yorkshire pudding for about 40 years, using almost the exact same ingredients you do. But I use three eggs and milk instead of water and an oven temp of 400º. I also use the roast drippings and I serve the pudding on the side with more drippings spooned over the pudding instead of making a gravy. It's delicious! I've only ever made it with beef but I wonder if it would be good with pork?

    I spent 50 years never knowing what a Yorkshire Pudding was, and thinking I had never had one, only to learn today that I eat them all the time, only I know them as Dutch Babies, and make large ones in pie pans hahaha

    Well there you go Ken , and like I said in the video they freeze great so you don't have to cook them on the day, just defrost and heat them up in the oven :) .

    Lovely, Just like me mam used to make.... Some times i add a splash of balsamic vinegar, salt, pepper and sage, simply to jazz them up a bit lol.

    I don’t know why, but I always thought that Yorkshire Pudding was something with a pudding filling. I guess not. So you said it goes with beef or stew. Your Yorkshire Pudding sure looks good! Wish I could reach my hand through my phone and taste a bite. I bet it is mouthwateringly delicious!

    Just came across your page this morning john whilst looking for ideas to cook beef for the first time. I always do chicken or turkey every sunday but fancy a change. I think im tremendous at making yorkie puds but think I’ll try your technique today. How much milk/water are you adding there?
