steve has fired up the teppan grill again this week to re-create one of our nutritious kokoro bowls. the nuoc cham tuna. kokoro means ‘spirit, heart + mind’ and this bold bowl was designed to feed your soul 🙏

2x tuna steaks
1 lime
1 large sweet potato
3 tbsp vegetable oil
100g quinoa
1 red onion
1 carrot
1 orange pepper
1 red pepper
1 cup edamame beans
80g kale, roughly chopped
2 coriander sprigs
salt + pepper to season

50g caster sugar
2 tbsp tamarind paste
5 tbsp distilled vinegar
5 tbsp fish sauce
pinch of sea salt
½ red chilli
3 coriander sprigs
