I went to Italy recently and ate so much pasta and I barely gained weight or felt bloated. Once I returned to the US, the food hit me like a brick. Bloated all the time, gained weight. The food quality here is definitely sub-par. Home-cooked meals is the best option you have. However, the quality of the ingredients here can't be trusted either.

This is really interesting. I'm not sure if anyone else ever experienced this but back in college I did an exchange program in Italy and I remember going to restaurants in Italy and having the traditional Italian Pizza and Pasta and feeling very full and energized but not bloated. Whereas I find that when I go to an Italian restaurant in America and have some pizza and pasta I feel extremely bloated for the rest of the day.

probably just higher quality flour that is higher in fiber, when you eat alot of carbs but mixed with lots of fiber you'll digest really fast and will feel lean very quickly after

thanks for making this video pietro! as always LOVE and appreciate your outlook and thoughts on these topics ❤ been really struggling with figuring out what to eat/eating them with my current health condition that's giving me lots of inflammation- possible leaky gut situation so I've been trying to up fibre intake in general as I've learnt it benefiting the gut microbes but sigh it's confusing when your body still doesn't react well or calms down! lol 😵💫 would def take note about soaking the whole grain flour in sth acidic since i just got some and needa use 😅 also maybe trying to make sourdough bc i do love bread 🥹 i hope i can enjoy life again someday being able to eat whatever i want even if it's just a few bites to taste :')

thank you so much for making things clear and easy to understand. A couple of years ago I got pulled into the keto and anti-carb scene where i ended up being afraid of eating any carbs, unhappy, and filling my diet with low carb but super processed foods which is in fact even worse. Only after i started being more open minded and questioning if all of this is really true, i started to slowly fix my poor eating habits and becoming healthier and happier. Sadly, there is still so much never ending contradiction on the internet when it comes to food and diet and people still want to make you believe that any form of carb, even if its from a fruit, is terrible for you so I'm so thankful that you took the time to film these videos to help out the average confused internet person just trying to be healthy.

I think the point you made about the anti-nutrients was one of the most important. I am a strong believer of grains being good for you as long as you address the anti-nutrients.

I tried whole grain flour and similars, my body doesn’t accept it. The main goal is what you said: maintain the food as simple, as not processed as you can + respect what your body accepts the best. Cheers !

Am I the only one here that looks at his body? Watches his eyebrows? Has knowledge of why he is famous? And for what reason? I was eating New York pizza before Pietro was born. I think that New York was serving pizza before Italy was serving pizza. We do have bread and hand cut noodles freshly baked using the world's best ingredients but we do draw the line at serving buttermilk with meals.
This made a lot of sense.

The standard of Italian food quality for the basic ingredients of flour, tomato, cheese is higher than in the US. Not compromising your gut bacteria is an advantage

Even though I might not have your looks, I always knew it was wrong to exclude all white flowers and replace them with whole grain or pick sweet potatoes over potatoes. Whenever I've tried that I ended up with an upset stomach. Balancing complex and fast carbs has always been the right thing for me.

I know that bread in Italy is traditionally made with "biga" which is a sour starter but does the pizza dough go through a 7 to 8 hour fermentation process before the bake?

Precisely! All in moderation. Often than not, your body "tells" you what you need, unless you are addicted. I've never restricted my diets on speicifc things and I always have a better physique than most people around me who constantly talking about diets and such. It's not that you shouldn't focus on what you eat, but don't be excessive on thinking aboslute good and bad in your food. They each has their own benefits.
People often don't realize the Italian serving size. It's usually much smaller than in fast food places. Pizza is very thin, Pasta often is just a starter, a small serving aside a no carb main course.

I agree with you pietro but can we know the most important part of nutrition which is how much of carbs do we need to eat in this case how much carbs do you eat ?
Something to keep in mind. The grains and produce in Italy aren’t genetically modified whereas they are here in the US. The dairy in Italy is often not pasteurized either. I can eat whatever I want in Italy and not gain weight. I eat the same foods here in the US and I feel sick and gain weight.

I don't think anyone in America would approve of unpasteurized milk. why do you think toxic milk is superior. By your reasoning we would have to eat in a barn with a cow if we wanted some milk.
Yes ,your suggestion IS better .WE have a variété fooding .But thèse fooding (Pasta,Pizza)IS thé good across thé World.And for physiology and métabolism of muscles it's a very good enrgy,j'm a student in Phisics.Thanks,for your teaching ,sée you again .

I saw a tv program about diabetes..it showed how white pasta and white bread spike blood sugar levels..a way to reduce this is reheating white pasta. If you reheat it the next day the glycemic index is lower..just a tip for people worried about spiking blood sugar at the wrong times of day

My family eats pretty high carb, plant based and I have so much energy from eating this way. I have no problems with my digestion eating a variety of foods. We eat rice or pasta everyday, as well as fruit, veg and legumes. Homemade bread is much better than store bought of course., and I'm perfecting my bread skills I'm glad someone else is spreading the message that carbs aren't bad. People over indulging is what is problematic, not the carbs. The Italian and Mediterranean diets are some of he best ways to nourish your body and they have been doing it that way for centuries. Eating pasta and bread the way the Italians do is much different than how most western countries do. Italian pizza is not like Pizza Hut or Domino's pizza.

I drink vinegar water before eating carbs, or eat resistant carbs, or both. The vinegar (and cinnamon) prevent insulin spikes that lead to stored fat.
