Well, we're back and it's Yeast Vs Yeast time again.
This time we pitted WHC Banana Split up against the Mangrove Jack's M20 to see which will give us the best outcome in tasty German wheat beer.

The kit we picked up for the base beer was the True to Style #15 - German Wheat Beer All Grain. That beer kit includes everything below, we just picked up a packet of the WHC Banana Split and tried half the batch with each.

Temperature °C (Step 1): 66

THE BOIL
Boil time (mins): 60
Hop / kettle additions and timing:
27g Hallertauer Mittelfruh @ 60min
Add yeast nutrients and kettle finnings at 15 mins before the end of the boil
Whirlpool / hop stand:
N/A
Yeast: Mangrove Jacks Bavarian Wheat Yeast M20
Fermentation temperature/steps: 17c until you have reached final gravity and this has been stable 48 hours. Usually 10-14 days
Secondary additions:
After fermentation is complete package and carbonate to a moderately high level (2.5-3 volumes)
Comments:
This style of beer is all about freshness and drinking whilst young. Youll want to enjoy on a warm late summer evening with friends and drink it whilst at its freshest. The balance of flavour and aroma is vital and the yeast used will be key to this. Fermenting on the cooler side of this yeasts capability will promote clove esters and moving to the warmer side of the scale will promote banana to show up. You can choose where you want this to sit but we prefer the clove profile, hence the fermentation temperature being lower.

    I’ve just brewed the same kit with the WHC Banana Split as well, got loads of banana and clove flavours. Did 3 days at 18c, then finished it off at 20c. Turned out amazing (it’s one of my favourite’s too)

    I want it! The WHC is mainly banana and I really want that! Good vid guys. Love a wheat beer but I don't feel I've ever had the banana really.

    To get the characteristics of both don't dual pitch, one will likely dominate. Just use the most under-utilized technique in the history of homebrewing (and probably craft brewing), blend! Just choose how much you want of each post-fermentation or even post-carbonation and cooling, it doesn't even have to be a 50-50 split. Save yourself that second tap, and keep wheat beer on one twice as long :)
