What can I do with Daikon? | Carrot & Daikon Pickle

Daikon (Mooli) is delicious, here is a great way to prolong the life of veg. Pickling is great & easy to do.
This recipes uses Mooli (Daikon) which has a lovely peppery taste. Make sure you have sterile jar to put the veg in.
Ingredients:
250g Mooli (peeled outer layer) chopped fine
250g Carrots (washed) chopped fine
Pickling Brine:
250ml warm water (boil water then cool)
2 Tbsp golden caster sugar
2 Tbsp Rice Vinegar (or apple cider vinegar)
1 tsp sea salt
2 x Bay Leaves (optional)
