This quick & easy soup recipe is perfect for using up potatoes. Despite a few ingredients it packs great flavour.
You can jazz it up with various toppings (cheese, crispy croutons, smoked bacons, herbs etc.)
Ingredients:
700g Potatoes (peeled & cubed)
1 x knob unsalted butter
1 x onion (peeled & finely sliced)
2 x celery stalks (washed & chopped)
1 x clove garlic (peeled & sliced)
1 x veg stock
750ml boiling water
150ml milk
salt & pepper
