Chicken & Butterbean Casserole Recipe - Malnutrition Awareness Week 2023

Here is a fantastic slow cooker recipe designed in collaboration with some amazing partners to highlight malnutrition awareness week.
it's a great recipe & there are many tips for upping the fat intake within the recipe tutorial & also below.
Notes: cooking time 2.5 - 3 hours - 2-3 portions - freezable
Ingredients:
4 x skinless, boneless chicken thigh fillets
2 tbsp oil
1 tbsp smoked paprika (optional)
2 onions (finely sliced)
2 garlic cloves (finely chopped)
1 tbsp plain flour
2 x stock cubes (chicken or vegetable) - made up to 600ml
70g tomato puree
1 x 400g tin plum tomatoes
3 x celery sticks (cut into 3cm pieces)
1 x 400g tin butterbeans (drained & rinsed)
large handful flat leaf parsley (roughly chopped)
Optional & serving suggestions.
Optional:
use chicken pieces with the skin on
add in 75g chorizo sausage
add in 2 tbsp double cream when adding in the butterbeans
Pack in more veg by adding in peppers or sweet potato
Serve:
With buttery mash, add in extra cheese or even an egg whilst mashing.
Rice - cook in coconut milk instead of water
