Yes,I would steam or braise veg together in minimum amount of water in a pan and use the water in the dish or for soups, sauces later. and don't peel especially if organic and use stalks of veg. ,and the white flesh of the peppers .This is a rather wasteful method .Also the dish is more a pie than a casserole

The reason to cook broccoli with a little milk is to reduce the smell. You can put half a cup of milk in the broccoli cooking water so that it helps absorb the bad smell of the broccoli. The juice of a half lemon can also do the trick.

In place of eggs and oil mixture, you could use a mixture of 2 cups milk to 1/2 cup flour. You may need to double it to cover veggies. It is a basic white sauce which makes a great base for many dishes. You can add four cups of any cheese and use a variety of herbs and/or seasonings to change it up.. I hope this is a help to you.

Supposedly the milk helps to tenderize the hard parts of the vegetables. I've known people who will put a little milk in the boiled salted water when making corn on the cob. In that case the milk softens up the cob andthe corn cooks faster.

Curious, why not use the same water after broccoli has been taken out? It's already hot. You're going to end up mixing them both together anyway.

I love the ingredients at the beginning except for the cauliflower. It seems like a recipe that you could add pasta and have it as a meal without the milk.. I will definitely try it this weekend..😋

I am looking forward to making this! I need more vegetables in my life. And the extra protein from the eggs and milk makes this a real meal. Could you explain the reason for the milk when blanching the broccoli and cauliflower? I have subscribed, and am keen to look at your archive for more veggie/protein dishes and meals. 🇨🇦💕
