I believe that dehydrating kelp would be rather easy, almost instant for the water tribe.

I feel like most of the greens the water tribe would have access to would be ones from the sea, it would be interesting to see how this recipe would change by using only aquatic ingredients, like by switching out the spinach for seaweed

i mean, it has spiruline wich is algae, but it's true the primary ingridient is spinach (after the flour of course)

Wow I haven't seen that episode since it first aired. Its neat how this dish looks relatively easy to make, looks just like the cartoon version, and can give a big chewy bite.
It’s hard to beat the OG babs, but I think Alvin is becoming my favorite KZreadr. Keep on being awesome dude

If you find Alvin cool you should check out his main 2 channels one that is him making documentaries (kinda) showing his camera and editing skills as he films the day in the life of a restaurant or something similar meanwhile he also has his main main channel where he spends a long time making a meal giving every ingredient the care and love it deserves like (I think this was one of the videos if not it is a hint at the kind of videos) One Week Lasagna

I always love how Babish and the crew come up with creative and thematic ways to color certain foods. The easy way out is just some food coloring, but they always find a way to do something a little different
i'd have imagined the noodles being mostly kelp based rather then spinach based (or whatever fantasy aquatic plants they have) and seeing as water benders has literal water manipulation they likely have a culture rich in fermented foods along with seafood

Those techniques would have been lost from the Southern Water Tribe, after all of their waterbenders were captures.

Kinda doubt that the watertribe who lives in the poles would have access to enough wheat to make flour noodles very often, but this does seem like the most reasonable approach.

I'm thinking their green noodles would just be kelp. However, by the time of Korra, the Water Tribes probably export produce from the Earth Kingdom, especially with Varrick as supplier.

According to the avatar cookbook Katara says that ever since the end of the war nations have been exporting each other's goods and this includes access to wheat and flour from the Earth Kingdom allowing for water tribe cuisine to evolve more from what it once was. This was how noodles was introduced to the Water Tribe during the ATLA era so I'd assume by Korra's timeline the seaweed noodles became a common meal

I've always curious about what this dish would be like in real life! I personally kinda imagined there to be strands of seaweed mixed in with the actual noodles, but a fishy stock with noodles works too! I kinda want to try to make this now, pretty sure I could find all the ingredients relatively easily.
I really like how this is a recipe I could follow. The ingredients are simple and the flavors are great, and the whole thing is so doable

Awesome bowl of noodles! Agree that the firmer, springier, bouncier for lack of better words, noodles have a better texture and overall mouth feel.

So was there no way for seaweed to infuse the noodles with their color, or would the taste have just been overwhelming if you'd used enough to do so? Because I have trouble believing spinach grows well at the poles.

This looks great! I absolutely love the tip of marinating the fish in a bit of cooking wine to reduce the fishiness. I gotta try that. I wonder if it would work on catfish? Also, TIME FOR A KORRA REWATCH.

I was wondering about the flour too. Outside of trading I suppose there may be native grasses and shrubs (I believe there are species of berries native to arctic climates) that maybe could be grounded to a mill. Probably wouldn't be the gluten-y dough we think of though.

I think making the noodles with the ramen-style baked baking soda would give this dish a nice added level of dimension, especially for being so simple.

It looks like I might be the only one who remembered this. Avatar is not anime! It was animated in Korea and was written and edited in American. The story also is very much created in American. The food looks absolutely amazing though, so you get a pass.

Spinach is the ideal ingredient if you want green textures; plus it's filled with nutrients and can fill you up.
Correction Avatar and Avatar The legend of Korra are not anime They are Western cartoons made in the vein of anime art style AKA anime esque

Being nitpicky and technical, but Korra isn't an anime. Anime is literally just any animation from Japan. Korra is American, so this shouldn't be an Anime with Alvin episode.

Alvin, has anyone ever told you that you sometimes sound like Mr. Sulu from Star Trek? The way your voice sounds especially when you end your sentences. As for the noodles, they look absolutely delicious. I liked how you used aromatics in the fish stock too.
