    I don’t get the obsession with soft-boiling. While a very overcooked yolk can be a bit chalky, there’s nothing unpleasant about a cooked yolk in a boiled egg.

    I mean, as a Brit, the idea of Scotch eggs being anything other than hard boiled and served stone cold is totally alien. But then, scotch egg is like the most boilerplate supermarket/truckstop readymade snack imaginable, so, the very idea of eating a Scotch egg hot, let alone with a runny yolk, feels kinda bougie to me. ;p

    I have been eating scotch eggs for years. Never have I heard they should have a runny yolk. We always used hard-boiled eggs with hot honey mustard to dip them in.

    As someone who lives in the UK, I do have a best scotch egg experience: I was working as a builder’s labourer at the time and my boss was the quintessential Northern hard man . Gruff. Tough. Vastly disliked me for being a Londoner. Anyway. We were working on a roof at the time, and the client had left us some fancy scotch eggs as a lunchtime offering. My boss, unwilling to concede that chewing is a necessary first step of the digestion process, insisted that I ate the egg as quickly as possible to return to work, and decided to demonstrate how to eat a scotch egg in a single bite. Friends, he jammed the snack in his mouth (not unlike Andrew) and bit down. I will never forget the sound. It was, as the kids would say, a ‘cronch’. It was not the mellow sound of a man biting through meat and egg, no. It was the sound of a man biting through a boiled egg with the shell still on, with some deep fried meat in the way. Long story short, he had a funny turn and threw up, and we all got to go home early. And my scotch egg was delicious.

    Scotch eggs are traditionally hardboiled in my experience but soft boiled eggs in them taste better in my opinion and I think it really is up to the maker

    Just a heads up! The pub recipe I use actually calls for less sausage around the egg. You cover that egg in a TON of sausage! It’s a thick layer and I’d say that’s why it’s not cooking all the way through. When I do them, I soft boil them just enough to where I can still peel them, and then I actually bake them. By the time the sausage is done, the whites inside solidify and the yolk is still gooey. Hope this helps!

    First thing I said when he cut them open was that was way more sausage than I used when I made them and that's why it was so pink. Of course, I can't be arsed to deep fry and just bake them in the oven.

    What is wrong with you people... Anything other than a runny yolk is just weird. Hard yolk eggs feel like chewing on paste. Plus, runny yolk is more flavorful.

    There’s an episode of Hell’s Kitchen and the judges (especial Gordon Ramsay) actually wanted it fully cooked. A few contestants cooked them with a runny yolk and lost points. I always thought if the yolk was hard, it was ruined

    Been watching this episode play out in my own kitchen over the last year or so, as my girlfriend tries to get a perfect scotch egg. I think she's finally got it down though. Last week's scotch eggs were *chef's kiss*. For peeling soft boiled eggs she figured out that you don't just shock them in ice like hard boiled eggs, you friggen let them get COLD in the ice water. Then to get the pork cooked, she fries for texture then finishes in the oven.

    I think the whole snack food thing is when they're made by people who make them like every day. Relatively simple ingredients, bulk-friendly cooking methods, and particular timetables.     My most interesting scotch eggspereance was while I was going to a camping event with my group in the SCA (live action medieval reenacting) I told my friend how to make them and he volunteered to pre-make 2 dozen for the group for breakfast. Saturday morning I awoke to the smell of him finishing warming them up in a pan and smelling the wonderful aroma of a camp fire and cooked meat. I got one and drooled with anticipation and took a bite and immediately herd and felt the unmistakable crunch of eggshell. He followed my directions to a T but I was under the assumption he would have the common sense to shell the eggs... No one ever made scotch eggs for the group again.

    I like it, but I also personally prefer his regular versions. The main reason I love Babish is because he gets straight to the food, while still maintaining enough personality to not make it feel distant. But I am glad he's making these videos still, that way everyone gets to have something to enjoy.

    The real lie is the runny egg yolk itself. The traditional Scotch Egg is medium to hard boiled. It should absolutely not be runny. But if you like it runny, just do it that way.

    I've never been to a bar/pub that they weren't hard boiled or restaurant that they didn't expend a bit of effort and even then they're medium boiled. His last egg was probably a little more runny than I've ever been served one. I like runny yolks but trying to pull that off in a scotch egg just sounds insane culinarily.

    Okay the lesson is clear: For a soft-boiled Scotch Egg, poach your eggs to a runny consistency and chill them so that everything inside has solidified, THEN proceed by encasing them in the sausage cocoon and prepping for frying. By having the eggs cooked to the consistency you know you want them at and then chilling them so they're ready after a deep fry, you're treating them the same way you would a mozzarella stick.

    I have no experience with scotch eggs but on one of the eggs that had raw pork I almost wonder if the pork was too thick for some of them as well. This seems like a great help for the eggs and should solve that step. I felt Babish's existential pain in this one. And drugs, lots of drugs.

    @@grandvivant I've made them in the past and genuinely the problem that Babish experienced is an incredibly common one... most scotch eggs are hard-boiled both because they're generally outdoor/picnic food (which is why you might find them at renaissance faires here in America), but also because frankly while a runny yolk is the dream they're kinda nightmarish to get from boiling shelled eggs because it's pure guesswork. The next time poor Babish does these treats he's either gonna try my technique, use an x-ray machine, or just throw his hands up and use hard-boiled eggs.

    During the youtube egg meltdown of 2021 I realised where Babish went wrong. The UK does love scotch eggs. But no one in the past 50 or so years has actually made them at home. We buy them. The cheap ones are hard boiled, the expensive ones are semi soft boiled.

    Andrew, I love that you tried so hard to make the yolk runny. But, as an English/Scottish person, I want to be straight with you and say that my Grandma never once made me a Scotch Egg with a runny yolk. They were always set, and I love them that way. Also, wrap the sausage and egg in a hot water pastry and turn them into Scitch Egg Cornish Pasties. They are fecking delicious!!!!

    Seriously, I'm American and I've always made them with hard boiled eggs! And I don't use large eggs, small work best (and no pastry, lol).

    The ones I've had had hard boiled egg that was chopped up, then a ball of the egg yolks and white are wrapped in the meat.

    Invented in 1738 by Fortnum & Mason in Piccadilly, London, England. Traditional recipe is a runny quail egg. To this day, they're supposed to be runny
