    Dear Kendall, I recommend eye makeup remover as a way to deal with having touched your face after chopping peppers with insufficient hand washing - it's a product meant to remove oily substances from the eyeball area, so it does a fabulous job on capsaicin

    The coconut milk looked pretty thin. I didnt see anything that made me think there was much coconut cream in that coconut milk. If you're looking to mimic heavy cream, go with a can of coconut cream. Thai Gardens sells it and Ive found it at more than a few grocery store chains. However heavy cream is usually what I see in most Tikka Masala recipes. Using a curry paste though is definitely a better choice. You're going to get better flavor from paste, and alot more if you make the paste fresh and from scratch.

    Coconut is more of a Chicken Korma vibe. Double/heavy cream is more typical. As is ghee (a clarified butter), instead of vegetable oil. Chicken Tikka Masala is a relatively new curry invented for the 1960s British palate by adapting a chicken tikka recipe with a tomato-based sauce. It probably didn't have fresh chilli and it definitely didn't have coconut milk. Just like every Indian family has their own unique garam masala made from a preferred blend of spices, it's up to you if you want to add these twists to your version of CTM. Some people add ground almonds, which again is more typical in other types of curry.

    For the tikka masala, try using only the cream part of a can of coconut milk. Just scrape off the top and leave the “water” part in the can. Makes it creamy without thinning the sauce.

    I didn't expect to cry watching a cooking show. That was great, to gift someone an education, to support them and show them you believe in them when they're probably at a pretty low point in life is a huge gift to give someone. It's really tough to lose your job, it can really deflate your ego and mess with your self-esteem. And then well you're feeling like that you have to decide what you want to do next. I wish Will much success!

    I’ve been watching Babish for years and he’s always very straight forward and stoic In his videos. This one really shows his personality and I couldn’t believe he was being so goofy it’s awesome

    I'm not crying you're crying 😭 congrats Will! this is so exciting, I went to culinary school and ultimately decided I wasn't wanting that to be my career but I will tell you it was the most fun I've ever had and I have learned invaluable skills in the kitchen that make me and the people I love happy with the food I make that we get to enjoy together. So at the very least if you see this through you will have made yourself and everyone you love proud, and hopefully this gives you the leg up and confidence you need to make food your life and your enjoyment❤️

    about adding coconut milk instead of heavy cream... coconut milk is traditionally added to South Indian dishes. Southern India is more tropical than Northern India which is more mountainous. tradition demands that heavy cream be used!

    Best episode ever with giving someone a chance to follow their dreams! Any chance that we can have updates on how Will progresses in the future? I've always made Tiki Masala with coconut milk, I'm not sure if that's a UK thing though.

    @@GarlicPudding Employers often don't want to hire someone overqualified because that person is more likely to be worth a higher wage than what the employer is offering and has more leverage for bargaining. They'd also supposedly be more likely to move on to different job if their current one doesn't meet their needs. However, OP is a perfect example of the fact that this isn't always true.

    in my case it's both underqualified and no people to vouch that I have whatever work ethic I may or may not have because I don't bond with people easily and don't maintain relationships of circumstance at all

    @@aribowman I always know things are going south with the "overqualified" line. Makes it really easy to change life direction. Employers don't like the life direction thing either, btw. Because it might change again. Apparently the ideal is for you to be chained to them by lack of choice while having financial obligations you must meet.

    The char on that chicken is exactly as it should be. Traditionally the chicken would be cooked in a tandoor which is super hot. The char adds so much flavour!

    I've made Andrew's original Tikka Masala three times. I think it's outstanding just the way it is but I can't wait to try it with the coconut milk.

    Try coconut cream. It's thicker than coconut milk and gives a similar rich and creamy taste you get from regular cream

    Yogurt is the way forward, especially in the marinading process. The lactic acid in the yogurt carries the flavours deep into the meat. You will see the difference when you cut the cooked meat and see how far the colour has penetrated into it.
