How to make jiggly wagashi, warabi mochi in two flavours, matcha and kinako // ASMR
Warabi mochi is made with bracken starch, not glutinous rice flour. Hon warabiko (pure bracken starch) can be quite expensive and hard to find, so I used warabimochiko instead. Warabimochiko is often made from other starches, such as sweet potato.

Makes 2-3 servings
Mochi:
- 75g warabimochiko (sweet potato starch)
- 350g water
Kuromitsu:
- 25g black (or brown) sugar
- 25g sugar
- 25g water
Topping:
- ~17g kinako (roasted soybean powder)
- ~13g matcha

I love all mochi but warabi mochi is one of my favourites! Its hard to describe the texture but its quite unique~

I LOVE warabimochi! I had the matcha one in Japan and it was so good, light and refreshing bitterness from the matcha and it kind of melts in your mouth, but at the same time it's sweet and a bit chewy. 🤤 I regret not buying a second cup of it that day (it was Spring and quite hot that day, very nice weather for warabimochi!) so I tried to find it in my city but the ones I tried are really not that great, really subpar. I had to make it myself from another video but I was very happy with the result compared to the ones I was finding in the shops. If anyone is thinking about trying it please give it a go! It is very simple and delicious! Only problem is the warabi starch is hard to find and expensive (it's hard to produce apparently), so if you can't find it or the warabimochiko that's used in this video, you can use regular old sweet potato starch or potato starch instead!

Ah I love warabimochi so much! It's such a satisfying treat! Tokara makes it locally every summer and I really should try making it at home, it's just hard to find warabimochiko most of the year and then I totally forget until Tokara's option pops up.

@@aliceinoutfitsfashioninspo8311 It's softer and bouncier! Like the soft set jello of mochi! Also I swear it's... cooling? Like you eat it at room temperature but it feels soft and cool when you bite into it. I feel like it's hard to quite properly describe warabimochi, it's unique in my experiences with mochi for texture but so nice!

I totally agree! I only find it here if its in a parfait and not all places gave it either. Theres a couple of Japanese grocery markets here so i’m happy to be able to get my hands on the starch 🥺

Man I've been trying to find this for over ten years! I think I finally found it!! A work mate brought this or similar clear Mochi cut into small squares with a powder exactly Iike this from their Japanese holiday. I still remember very well it tasted to light almost rice flavour. I have tried all kinds of mochis here like but never found that one. I cannot cook this but at least i know what its called now and will try to find it. Thanks 🤞

I got the ingredients mainly from my local Japanese store, it's called izumiya! the clear box is reused from a dessert I got from a bakery!

Unfortunately no I don’t have a recipe for that but you can try using potato starch or tapioca starch which I’ve seen others use
