Just to clear the air. I never once said this was an authentic Mexican recipe (I’m very well aware it’s not) I’m also not the person that created the name for this recipe (that in the beginning of the video I stated it’s literally just a salsa) Cowboy Caviar has been around for years and years, recently it’s gone viral on the web and I’ve been asked to share my take on it probably hundreds of times so I did. A quick Google search will show you it’s not a new idea and certainly not one I came up with. I do my absolute BEST to show appreciation and respect to different cultures through food, I would never purposely disrespect anyone or any culture. This is not a new concept for this recipe, just Google it and you’ll see! There’s no need to send awful messages and comments, it’s harmless and I would never say this is an authentic recipe.

Cowboy caviar is one of my FAVS. I make it all summer long. I soak mine overnight in Canola oil, sugar & apple cider vinegar, then strain it before eating. I'm excited to see how you make yours. Thanks for sharing❤️

Please correct me if I'm wrong but I thought cowboy caviar was a tex-mex thing and it is not the same as pico de Gallo, I though pico de Gallo aka salsa bandera so cilantro, tomate, cebolla. This seems to be different than that, also hasn't cowboy caviar existed like decades before it became a big deal to share a recipe for it.

Cowboy caviar has existed for years but recently over the last month or two somehow it got really really popular and everyone has been sharing their take on it. I didn’t create the idea for this, I didn’t create the name of it, I simply shared my recipe. As I stated in the beginning of the video, this is pretty much a salsa.

Apparently this recipe was invented by the Food Manager of the Dallas Neiman-Marcus department store. They wanted a catchy name to go with it, so chose "Texas Caviar." (or as some say, "Cowboy Caviar"). The dish was a hit, the recipe took off and the rest is history!
I've been making this for years with black beans and no cucumber. I am intrigued by the addition of cucumber, though.

As a short cut, you can skip making the vinaigrette and just buy a bottle of Tiger Sauce.. been making this for years!

Hi Laura, I, as both my son and daughter absolutely cannot eat cilantro. It seems we have a gene that makes that herb taste like soap to us. Would you know what we could use as a substitute when a recipe calls for cilantro?

Parsley or arugula. Also, if you can find it, fresh sorrel herb (not the Jamaican flower), which has a bit of a lemony taste.
I'm one of the 25% who can't tolerate cilantro. Is parsley an acceptable substitute?

Our family has made a version of this for years using shoe-peg corn (no lime, no cucumbers) and called it Texas Caviar. And used Wishbone Italian dressing as the "sauce" - the recipe said it HAD to be the Wishbone brand. I'm sure some will frown on that part - but something about the flavoring of it melds really well with these ingredients. Served with the Fritos Scoops to get just the right ratio of caviar to chip in one bite - lol! Can't wait to try your version!

Because the tomatoes are red,...the yellow peppers stand out, and dont blend in with tomatoes.

I think what you did is nothing like people are getting upset about. I think people that did the more simple salsa/salad seemed like they were doing a spin of Pico de gallo, which has also been around for years

So if took a traditional Italian dish that your grandparents and great grandparents cooked and passed down these recipes, and then you see someone who’s not Italian and making a traditional dish and just giving it a whole new name. Yes, try out our traditional dishes because that’s not the issue. The issue is , there isn’t any education about learning from other cultures and the traditional foods that have been a staple in our home and in our families. So the next time you go to a authentic Mexican restaurant, and you say cowboy caviar. They are going to look at you crazy because that’s not what it’s called.

The original cowboys; Vaqueros, were from Mexico. Their skills in horse riding and herding were widely respected, so was their practical and nutritious cooking. Those aspects were shared with people from other cultures that had respect and a willingness to learn and adapt. It was not a matter of appropriating culture, but a matter of appreciating it. Ok?
