    I always split bellpeppers in half and then rip out the internals with my hand. It seems quicker to do so and you have more of the bell peppers. Why is that not the preffered way of chefs?

    I've been watching your videos for about 6(ish) years. When I first got my cat as a kitten, 5 1/2 years ago, we would watch you together. I recently had to say goodbye forever to him.     My aunt brings this to every family function and everyone loves it. We don't do it with chips, just have it as a side for burgers and dogs. I've never known the name - dishes at our get togethers are named after the people that bring them. "Steve's beans," "Kat's carrots," "Ana's slaw" etc. Now I know the name!

    It's good with chips, but I've found it nice ON a hot dog. Almost a Chicago Style dog at that point. The acid of the Caviar goes well with the umami of the Dog. Totally worth the weird looks you're going to get from your family at the next get together!

    I was thinking that. Maybe just throw the corn on a griddle or cast iron pan and char it a little if you can't grill it. It'll be leagues better than throwing regular canned corn in

    America's Test Kitchen made a recipe for Esquites and they demonstrated a good technique for getting great char on the corn kernels in a skillet. The chef also explained how and why this technique is actually even better than grilling whole corn cobs over a direct flame on a grill. The recipe is on their KZread Channel in case anyone is interested. This Cowboy Caviar recipe looks fantastic! Perhaps I'll have to make a batch for the next family gathering! Thanks Chef John! ❤

    I just made it for the first time and I used frozen Birdseye fire roasted corn. Also fire roasted peppers and tomatoes. It was a smash hit. I don't like Jalapenos, so I used pickled Serranoes.

    I made it 3 days after you posted the recipe and was a bomb!! my son had a 4th of July party, I made another batch for the party with fresh corn and fresh tomato from the garden, everybody loved it and asked me for the recipe! even Mexicans guests :) chef John was not joking when he said if you start eating it you CAN'T quit!!!!! thank you sir!!!!!!!!

    Chef John you rock! What a great way to eat your Fresh Vegetables! Sneak em in and call it dip. I’m sure the kids could fall for this? Well if not just more for us adult children! I love your recipes. Thanks so much! I’m definitely taking this to my next barbecue as the 7 layer dip is getting old! Although I do make a version of 7 layer dip but I add cooked crumbled ground beef that I’ve seasoned with taco seasoning mix. Then with some pita bread I can call that dinner!

    That stuff is sooooo good.❤❤❤ my dressing is oil, apple cider vinagar and sugar heated ,then cooled. Fresh celery, onion, sweet peppers, jalapeños,canned sweet corn and any kind of beans you like. Sometimes, i add cilantro. 😊😊

    This stuff really is addictive. A relative brings this to every family gathering and I recently got her recipe so I could make it for my family. Her’s was almost identical to Chef John’s.     I love this. I make it bulk for work lunch and pop it in the microwave for like 30 or 45 sec to take the chill out. So yummy and satisfying. I put some panchetta or a seasoned chicken thigh choped up and grilled for protene. ❤

    We had our family reunion today and one of the ladies brought this dish! First time I had this and I loved it! So did other family members at our table. It was nearly the same as yours but they put garbanzo beans in it instead of the black-eyed peas. I think black-eyed would taste better, so when I make this, your recipe is how I will make it!

    Oh my god, this dish was amazing! I prepared it for my friend's party grill las weekend.     Made this today as a side for a cook-in, and even though it's still chilling and marinating in the fridge, that bite I took to make sure everything was combined was amazing!     3:27 I would suggest to try black-eyed peas in some Hoppin' John as your first time trying them. I used to eat just black-eyed peas, ham and cornbread for good luck on Jan. 1st, but for many years it has swapped to Hoppin' John and I eat everything I fix. Since it focuses more on the peas and it isn't as hidden like with Cowboy Caviar. My mom has actually been wanting to find a good recipe for this since my bro always brings some Cowboy Caviar Salsa from Trader Joe's when he visits.

    This is definitely going on my regular healthy menu. I feel, for me, raw tenderstem broccoli or fresh raw young asparagus or raw diced cauliflower, or indeed all three would be a great asset.     Thanks chef John .. I’ve been making this dish for many years . Definitely a crowd pleaser that I didn’t think could be improved… but I think a couple of your choices better . I use fresh jalapeño peppers, but I think the tangy taste of pickled ones are a better idea… using grilled peppers sounds nice. I use red wine vinegar but think the rice wine vinegar would be better. One suggestion from me .. if not using fresh grilled , canned corn is way better than frozen. 100% agree that fresh diced tomato is much better then chopped canned . Scoop corn chips are a must.

    After making needed to increase sugar 3x to get to the sweetness I like. A lot more flavors than my wife was used to from her basic recipe so of course my family panned it as too spicy and too many ingredients. First bust of yours I’ve made. You can’t win the all. I still like the creativity and now I have chipotle powder in the cupboard I have to find a use for. So there’s that. Thank you for your work.

    Hi John, I just made this for the first time. It is scrumptious 😋. Too bad I decided to start keto this week (after I finish the Cowboy Caviar). I will share it with my sisters. I used a red bell pepper, a poblano pepper and jalapeño pepper to make the 1.5 cups of pepper. No corn chips though (since I’m going keto this week). I think cucumber will be good in this as well. I agree about not using avocado.

    I discovered this on my first trip to Texas & yes, I was asked to bring it to the 2006 Oscar Party. And yes, again, I've overheard someone ask their date to refresh their cocktail for them as they refused to walk away from the Texas Caviar. PS: Fresh ingredients are Definitively a game changer!!!
